'93 Multitrack Commuting Rocket

I bought this 720 Trek Multitrack from 1993. It has been used a lot but still got some life left in it. I wanted to build a reliable bike for my daily commute.

I replaced the old cantilever brakes for some trusted shimano V-brakes and had to get some new wheels. I added new shifters, but I can't get the Shimano 200GS derailleurs to work properly and blame it on the age (I think they are original). Does anybody got some experience with those?

Tires: Continental Contact Speed (they just keep on rolling)

Rack: Tubus Vega

Fender: SKS Bluemels

Saddle: Brooks C-17 (looks great, but definitely not the most comfy one)

Handlebar: Zniino Carbon Gravel H (I wanted to try something new and I'm not disappointed)
