I needed to use up some strawberries and made Angel Food Cupcakes by Homemade in the Kitchen on a whim a couple weeks ago. Whipped cream was made using vegan heavy cream. And now I'm caught up to the current challenge!

Raspberry Himbeer Schnecken recipe from Red Currant Bakery. I rushed the rise and bake a little but they were still tasty. Would definitely bake again.

Week 24: Showstopper - Chocolate, Orange, and Caramel Cake

I've been wanting to make something from Showstopping Cakes by Rahul Mandal from the Great British Baking Show for awhile and what better time than Showstopper week! Since I didn't need to eat a three layer cake myself, I reduced the cake to 25% and used two 5" pans and reduced the caramel and ganache recipes by 50%. The flavors are amazing but the ganache came out really dry and crumbly, which made whipping impossible and spreading difficult. Overall, I like the cake but would need a few more practice runs before serving to others.

Week 23: Quick Bread - Healthy Banana Bread

I normally use a decidedly *not* healthy banana bread recipe from my mom but wanted to try something a little lower in calories. This recipe from Tastes Better from Scratch was pretty good, although not as tasty as the high oil and sugar version.

Week 20: Berries - Almond Streusel Cake with Balsamic Strawberries

I was watching Bakeoff and a baker made a balsamic strawberry cake, which was a flavor mix I hadn't tried before. Their cake included lots of cream but this recipe from ButterWitch appealed to me because the almond flour sounded like a great flavor combo with the strawberries and balsamic vinegar. Definitely tastey, although I'd like to try one of the other recipes I ran across that incorporated the balsamic vinegar into the cake batter as well.

Week 18: Low Sugar - Soft Pretzels and Carrot Cake

I made soft pretzels just because I was craving them and figured they should count for this challenge because they aren't cake and there's no frosting like a lot of the things I bake. I used a recipe from Alyona's Cooking and they were so delicious!

I've also been meaning to try sugar substitutes so I made carrot cake with cream cheese frosting, substituting monk fruit sweetener, using the recipe from The Ultimate Baking for One Cookbook. It was NOT good! I knew the frosting texture would be off since I used granulated monkfruit instead of powdered sugar but the taste and texture of the cake was terrible. I'll definitely stick with real sugar going forward.
