Vegan rice pudding (Indian Kheer)
Vegan Kheer or payasam made with Oat Milk and coconut milk
Recipe:
Soak one cup of rice in water for an hour.
Boil 2 cups of oat Milk and 1 cup of coconut milk in a non stick pan.
Keep stirring the milk and scrub the bottom of the pan to clear any milk sticking to the pan.
When the milk is thickened and reduced a little, add the soaked rice.
Continue to cook by stirring until the rice is fully cooked.
And rice grains can no longer be separated from the liquid.
Add more milk in between if the pudding is getting too thick.
Cool down a little. Add sugar as per taste. Sprinkle fresh cardamom powder.
Garnish with chopped pistachios, almonds, cashews, raisins or any other nuts of your choice.
Can be eaten warm or chilled.
