Weekend Bake

First time with nuts. The wife laid out the challenge, and she liked it! 😂
Ingredients:
400g KA Bread flour
100g Einkorn
350g Water
125g Starter
12g Salt
50g Sunflower seeds
50g Pumkin seeds
50g Pistachios
Extra nuts for topping.

Process:
Mix Water, Flours - autolyse 1 hour
Starter WAIT 30 minutes
Salt. Wait 15 minutes.
1st Coil fold, Wait 30 minutes.
2nd Coil fold, Wait 30 minutes. Add inclusions
3rd Coil fold, Wait 30 minutes.
4th Coil fold, Wait 30 minutes.
Placed dough into the proofing box at 80F - 3 hours and 50% rise
Pre-shaped the dough. Rest for 20 Minutes.
Shaped the dough, roll the top of the dough in extra nuts for topping. Place in Batard basket.
Cold Fermentation in the Frig!
Heat oven to 450F place Dutch Oven in the oven. Allow 30 minutes for pre-heat
Place Bread in the oven, add ice for steam and spray the bread with a mist of water
Bake bread for 30 mins
Remove the lid and bake bread for 8 minutes
Pull bread and allow 1 hour to cool and finish cooking.

Weekend Bake

Trying out my new Wondermill by baking a 100% FMF hard white wheat loaf. I knew it would be somewhat dense, but the flavor is worth it! This will be my base loaf and I’ll begin experimenting to improve the oven spring. Don’t really want to add anything to it, just work out the basics.
