Suggest your coffee brewing setup.

I am upgrading my setup and would love recommendations.

I am using panniers so have space. It's also comfort touring, going remote, though like to minimise weight but for a good cuppa happy to pay weight plenty.

I read good things about aeropress.

Starbucks via and other similar instant are also mentioned that some like and happy with that.
