Paprika Chicken and Potatoes

Needed a quick and easy dinner tonight. NYT did not fail me. I used smoked paprika, and added onion slices to the chicken and potatoes when roasting. I had my doubts about the potatoes roasting underneath the chicken and I wasn’t wrong. I ended up removing the chicken, cranking the oven up to 425 and roasting the potatoes for about 10 extra minutes on their own. I later checked the comments and it seems the extra time to roast the potatoes needed by most. The kids loved the “dip-dip”. I would make that for fries anytime.

Grilled Za’atar Shrimp with Herby Yogurt

My mom came over for dinner tonight and I wanted something I could prep earlier in the day and get on the table quickly. It’s been so hot and this was nice and refreshing. The kids liked helping make the Herby Yogurt. I did not have any parsley, but I had some cilantro on hand so I subbed that in. I tasted it and decided to grate in a garlic clove. The meal was served with a salad, rice, and pita. It was a nice little meal and came together pretty quick.

Lunchbox Harvest Muffins

These are so damn delicious. I am a lover of uncomplicated recipes that I can make with my kids. We used apple, zucchini, coconut, carrots, golden raisins, and walnuts in the muffins. No wheat flour, so I used AP. What a forgiving recipe. My kids ate up the recipe and a half that we made. I kept them in the fridge and the cool midday muffin has been treat on these hot summer days. Make these without delay.

We have been in our house for about eight years. This year we noticed some buckling of our hardwood floors. It ended up being a leak from our dishwasher. Part of the repairs have included, pulling up flooring, replacing, and then having to re-scrape and stain the floors all over again. The floors were scraped and stained last week and I went in to check the progress. The pre-leak condition flooring was a very light hand scrape, with the grain. Now there are gouges and multiple deep “chatter marks.” The heavy scraping made the stain absorption throughout the floors inconsistent and likely the stain could not be cleaned/wiped away and blend with the surrounding planks. There are probably 20 plus areas that are noticeably much darker and much more rough than the surrounding planks. The photos of the finished work done. It just isn’t up to par in returning the floors to their pre-leak condition. How does one fix this? The last two photos are the original stain and look. Yes, I had posted this previously, but none of my pictures uploaded. Thanks for letting me know!

So, we moved into our house 8 years ago. It had lovely light hand scraped hardwood flooring. We had a recent water leak in the kitchen. Flooring had to be replaced and the rest of the house had to be re-scraped and stained. I came back to the house to check it out and there are 20 very rough spots. A professional called them "chatter marks". I have to call insurance today to see how this can be fixed. Do they have to re-do it all in order for it to be fixed? the last two photos are the old floors with the new prior to any scraping or staining.
