Gnarly rhody pruning advice

This is an old (40+ year) rhody that's in very good health but is also very overgrown. I started to remove some of the smaller crossing branches to see what's what and before I go further I'd love some feedback on best approaches.

My preference is NOT to chop to the ground, but to take it back to a decent shape this year, see how it develops and prune again next year if needed.

Kalibos Cabbage heading?

First time growing this - it's Kalibos purple cabbage. It forms a purple, pyramidal head. How close would you say these are to heading? Steps to take to encourage them?

Hey, I'm thinking of hiring folks to clear out a lot of ivy and blackberry from the back yard. I don't want to do the 'hire guy from home depot' or 'get some high school kids' bit and my back is messed up enough that it would take me a LOONG time.

Any have recs for a good, reliable place in the area who does this?

The blackberry is starting up again and I still have some ivy. I'm considering renting goats to come in and decimate this. Anyone done this? If so, how was it? I'm in the Greater Seattle area, fyi
