Short solo trip to Taiwan

Hiii everyone!
I (f/32) plan to make a solo trip to Taiwan in this November and I need some help with it.
I will spend 5 whole days on the island and I'd like to see the most I can while I'm there. I'm thinking about going along the Eastern side from Taipei and then taking the high speed rail from Kaohsiung to go back. I'd like to see some of the local culture and traditions, I don't mind going to the tourist traps if it's necessary but I'd rather see the countryside, the slow, laidback life and have some rest of mind there too. For my last 1-2 days I'd do Taipei and the first 3-4 days the East/Southeast. I heard that at Wai'ao beach you can take surf classes for beginners and that got my attention. But I don't know if I'll have time for that. I know 5 days is very short, but now I cannot leave work for a longer period sadly.

Can you please help me recommend some attractions, places, towns, programs that are maybe underrated or not so touristy? (If something is a MUST I can do the popular, "every travellers should try out" stuff too.) Also it would be nice if the travel time to it didn't take up half a day, I won't rent a car.
