I finally mastered the recipe (Alfredo)

I’ve found several variations of the recipe below online, (cashew Alfredo) but they usually end up being ‘off’ or not flavorful enough to my liking. After many attempts, I’ve found below is what I believe to be the golden ratio for each ingredient. I usually double the recipe to make sure I have leftovers but this is what I’d consider to be a standard 1 - 1.5 serving size.

1 C raw cashews
3/4 C or so water
1 tbsp + squeeze lemon juice
4 tbsp nutritional yeast
1/2 tsp onion powder + pinch
1/2 tsp minced garlic
Pinch black pepper
• best pasta to use is penne
• Add a slice of vegan butter to the sauce when heating (top with/ fresh or dried parsley)

I never pre-soak my cashews and never have a problem, but if you don’t have a powerful blender, you may want to include this step.

Add all ingredients except vegan butter to a blender. Blend until smooth and creamy.

Because this version is thicker than most I recommend heating on a low - medium low setting while stirring frequently. Try not to overheat the sauce and just add it to freshly made pasta.

To me this tastes even better than what I remember regular dairy Alfredo tasting like. It’s filling and satisfying!

Game changer 🥭🍫

Okay so this stuff is BETTER than the vegan Nutella and organic! Today I had the strange idea of swirling some into my mango smoothie and well you’ll just have to try it for yourself because it was amazzzzing

PS. If you haven’t already, try the full fat oatmylk by oatly it’s wayyy creamier than reg mylk alternatives and great for smoothies/cereal

Norwegian Cruise Line Vegan Options

On day 3 of my Alaskan cruise, (Bliss) prior research made it sound more difficult but the kitchen crew at the Manhattan restaurant is very accommodating. They even made me a custom carrot cake tonight for dessert as a special surprise.

The buffet has a few things everyday for breakfast, lunch and dinner. The Indian station is mostly vegan everyday.

I know there are some cruise lines that are better for vegans, but overall I would rate my experience a 7/10 when I was expecting a bit worse.

SalsaXranch and salsa and ranch
Chao shreds
White corn chips
Gardien xtra krispy nugs

Now I can sleep happy
