Toddler dinner ideas for cooking with a broken arm

Hi, all. I'm a WFH mom, and I broke my arm earlier this month. I don't know yet if I'll have to have surgery, but either way, my arm (fortunately my non-dominant side) is out of commission for a bit. I still want to make dinners and help out at the house as much as I can—without injuring myself further. My spouse does a lot for us, especially right now (I haven't figured out yet how to help with diaper changes, how to lift the boy into the crib, how to get him into a carseat, etc.), and his work schedule is busy. I just want to keep household stress to a minimum if possible.

That said, I'm looking for truly simple dinner recipes that are likely to be somewhat toddler-approved. The main thing I'm trying to avoid is chopping, I guess, and having to manage multiple heavy pots/pans/bowls. And, of course, the current parasite risk in fresh (uncooked) produce. I did fajitas last night with pre-chopped veggies, and that was pretty successful. Would love to hear your ideas!

Sheraton Waikiki vs. Outrigger Waikiki Beach Resort, late August with an 18-month-old?

Basically, I have already booked Outrigger Waikiki Beach Resort for 5 nights the last week of August through Costco Travel, but I'm considering contacting them to cancel while I still can and booking the Sheraton instead.

The Sheraton is about $300 more but comes with 2 breakfasts each day and a $100 resort credit. Outrigger comes with no complimentary food/resort credit (though apparently the kid gets a free breakfast with the purchase of one adult breakfast daily), but we do get the $150 Costco digital gift card. I'm thinking cost-wise, these would shake out almost exactly the same. Both come with hotel transfers.

I have been excited about my booking; the location looks so fun, and we don't really need a huge pool for our toddler. I've read that the Sheraton may be quieter, although we're actually not too too concerned about noise unless it'd really mean we and the toddler couldn't get sleep. I think he'd like the liveliness.

But there's an advisory for Outrigger "property enhancements" 03/02/2026 to 10/14/2026: "OUTRIGGER Waikiki Beach Resort will be undergoing an enhancement project that will impact select areas of the resort. The Voyager 47 Club Lounge will also be closed for enhancements beginning in mid-April 2026. Guests may notice intermittent daytime activity in select areas Monday - Friday from 9:00 a.m. to 4:00 p.m. Evenings and weekends remain uninterrupted. Signature dining and experiences, including Duke's Waikiki, Hula Grill, and Blue Note Hawai'i, along with the pool area, concierge services, direct beach access, Aqualani Beach Services, and Faith Surf School, will remain fully available."

If construction is really loud, constant, or happening during sleep hours—I just don't know if it's worth it. I know there are some similar threads out there, but I'd love if anybody has thoughts on this considering the advisory, the time of year, the kid's age. TIA!
