My cat hisses at mice.

It's the most bizarre thing. I've never had a cat do this, but this kitty will growl and hiss when she encounters a mouse. At first I thought she was just food defensive, but no, she's hostile towards the mouse itself. Has anyone had a cat behave this way?

For context, she's two, we found her starving behind our chicken coop at about 6 weeks and immediately adopted her. I have two other cats that behave normally around other critters like mice. She never learned to hunt on her own, so I suspect that's part of the issue.
