Taking easy classes to boost my GPA?

I'm at a pretty competitive state school for business, and I'm also pursuing a double degree in economics. The median GPA for this business school is curved to 3.2, I started my business class curriculumn with a 3.79 GPA and thus it has dropped a decent amount. I was thinking of taking some easy classes in order to bring my GPA up by the time I graduate. Maybe an extra quarter or 2 of these easy classes?

Is this an optimal route? I know how important it is to maintain a high GPA to be more competitive. I would love to hear some thoughts.
