Anemic despite B12 supplementation

I have been on a WFPD for some time, mainly for health reasons. 14 years ago I had a heart by-pass operation and swore to avoid any future "episodes" ( and I have) so I went on a WFBD. Over time I have strayed a bit, but generally have adhered to the lifestyle. Take note, I have had no red animal meat in years. My cardiologist periodically does blood work, and every test comes out with my blood being anemic. Previously, he was not too concerned as my hemoglobin, RBC etc was practically borderline low..this recent blood test just last week, showed further anemia despite me taking Vitamin B12 supplements, on top of adding fortified nutritional yeast to many meals such as oatmeal, smoothies, etc....I really don't have the primary symptoms associated with anemia like extreme tiredness, shortness of breath, etc.so maybe I shouldn't be too concerned?....If anybody has any suggestions on how to further supplement my diet to address the anemia, I would appreciate the advice.
