Eggs, indeed, are super foods!

I grew up as a vegetarian. I have been having eggs only for the past 6-7 years, and that too, because I couldn’t not find any other brekkie options that were easy to make and kept me full.

I’ve always had my haemoglobin teetering between 6-8 (my mum’s side have notoriously low HB, as low as 4). I cannot believe how much my HB has increased since I started including eggs into my diet. It’s now in the normal range.

But the most important thing was how my blood sugar had normalised. I was at risk of diabetes because it’s my dad’s side’s heirloom disease. And, added to that, I had PCOS. So insulin resistance and diabetes were always a point of worry for me. Today, I had just come back from giving my glucose test as a 6m pregnant woman. All normal. Fasting, glucose tolerance, everything. No gestational diabetes.

My diet has not changed much except for addition of eggs (2-3 per day) and I know it is not the only reason. But somehow, it makes sense.
