How does my attempt at my poor man's brisket(chuck roast) look? It was a little dry but thats the nature with chuck roast.
Smoked at 225 for about 6 hours, wrapped and smoked at 275 for another 2 hours then rest for an hour and a half. Could have shortened the time for a little bit of a better turnout but I thought it was pretty good!
