Top kitchen remodeling options in Los Angeles which one do you recommend?

Running a small bed and breakfast and we finally got the loan approved to upgrade the main kitchen. It's a historic property so we need someone who actually knows how to work around old plumbing and weird layouts without destroying the character.

I've seen other owners get scammed by contractors who promise custom work but just install cheap prefab cabinets. I literally cannot afford to make a bad hire right now.
