Sardine pizza is good

After seeing a recent post about sardines on pizza, I decided to give it a try. I used some red pesto for the sauce, spicy sardines, mozzarella, sun dried tomatoes, and onion. Would definitely make this again.

Gochujang roasted potatoes with crispy fried anchovies

Oh yeah, that was good. The Patagonia provisions anchovies held up well to frying, they stayed nice and firm with a good bite. I tossed the anchovies in flour and shallow fried them in a neutral oil. The sauce for the potatoes was gochujang, gochugaru, soy sauce and mirin.

A new find at Walmart

I haven't seen these before. The Bettergoods tuna salad tins make for a very satisfying lunch. Looking forward to trying these out.

Deenz and beanz

A little experiment, but I thought these might work together. I layered the sardines over the beans and topped it with a couple of slices of provolone. Baked it for about 20 minutes, then threw it in the air fryer to brown the top.

It was pretty darn tasty, although the sardines were just a tad too salty for my preference. Would definitely eat again.

Sardines & Shimeji Takikomigohan

Really easy to make, all the ingredients go into the rice cooker. Very tasty, with a bit of smokiness from the sardines. I could definitely smell it cooking!

I really need to stop buying tins

But I keep finding interesting things. I stopped by Walmart yesterday and checked out the selection. Found some Polar dines, which I haven't seen before.

The Bettergoods tuna salads are part of my regular lunch rotation. They are quite good and very filling.

Goya jumbo squid with pasta and Calabrese pest

Tried out some Goya jumbo squid in garlic sauce and a jar of Calabrese pesto I found at Aldi. The squid was nice and tender, but not very garlicy. There was quite a bit of sauce in the tin, mostly oil. The pesto didn't have much oil in it, so the oil from the tin was welcome. It turned out very tasty.

Bonus picture of my original dinner plan using a jar of lemon pesto from Aldi. I am so glad I tasted the pesto first, it was terrible! The main ingredients were oil and potatoes. Potato? In pesto? So glad I didn't ruin my squid.

Alaska Smokehouse Pepper Garlic Salmon

I tried out the Alaska Smokehouse Garlic Pepper salmon spread I picked up at Homegoods a couple of weeks ago. Upon opening the can it certainly gives you the pet food appearance of canned pâté. Sadly, the experience did not improve. The smell was fishy with no hint of garlic. Straight out of the tin, the flavor was pretty mild with no detectable garlic or pepper flavor.

I tried out the serving suggestion on the packaging and mixed it with some cream cheese. I added a bit of salt, black pepper, and fresh dill. That improved the flavor a little, but it was still a bit bland for my preferences.

It was an interesting experiment, and I still have 2 more tins to try out. But, I won't be buying this again.

Sometimes you find a winner, sometimes dinner ends in failure.

I was at one of my local Wegmans, and after trying the Fruits de mer sardines, I figured I would swing by the seafood department to see if they had anything. Cue my surprise when I found these dill marinated Herring fillets in the refrigerated case.

At $10 they are a bit pricey, but I am willing to try something once. The package contained 3 and a half filets, a bit meager IMO. I tried a bit straight out of the package, and much to my surprise it was sweet! Looking at the ingredients, and sure enough there was sugar in the marinade.

My plan was to serve the Herring over roasted potatoes with a labne dill dressing, and I had already started the potatoes when I tasted the fish. And this is where, my fishy friends, things fell apart. I tried warming the fish in a nonstick skillet and it almost immediately started to disintegrate.

I quickly pulled it from the heat and put the fish over the potatoes. The dill flavor was present, but the sweetness was a bit too dominant.

Would I buy these again? Probably not. They are probably best served in some sort of a cold dish.

I found the Fruits de mer sardines at Wegmans after a bit of searching. I live in their home territory, so I have a bunch of stores within an easy drive. Found in a refrigerated case in the seafood section of the store.

The sardines are definitely different from the canned variety. They are whole butterflied filets with no bones. Much firmer than most of the tins I have eaten.

I put them on some toasted sourdough bread with a bit of pesto and parmigiana reggiano, then put them under the broiler to brown.

All credit to u/Catsnaccs for this wonderful idea. Roasted potatoes seasoned with salt, pepper, garlic, onion, and Hungarian paprika. A labne, dill and lemon juice sauce. Fried Patagonia anchovies in garlic. Some fresh dill and wild chives from my yard. Fantastic!
