Low carb meals?
Hi, this is my first time posting anywhere on reddit so be patient with me! I am a ball of anxiety.
I've recently ran out of insulin up until the 22nd, the day of my appointment at the endocrinologist. I have issues calling and setting appointments and it ended up biting me in the ass because I now have to watch very carefully what I eat until then, but it is proving very difficult.
I am autistic and struggle with eating certain things due to sensory issues and I try to avoid change, that goes for what I eat too, because often I eat the same things over and over because it is overwhelming to try new things. Most of what I eat consist of pretty carby stuff but I have to be extra careful of what I ingest for now. I've considered salads but I can't get over the texture of lettuce, it's way too crunchy.
Does anyone have any recommendations for easy low carb meals that wouldn't be too expensive, a hassle to make, and doesn't have too many overwhelming textures?
