Cooked 4 racks of pork ribs for family and friends tonight for 4th of July. Started off at 200f for an hr and then bumped to 250 until the meat was the color I wanted (~200ish) and then wrapped in foil til tender.

Has anyone tried to freeze dry their brisket slices? I have some running in my freeze dryer right now but not sure how they will turn out lol. I’m not finding anything online..would anyone buy that at a farmers market? 😂
Threw a 17lb big boy on the smoker for about 22 hours..also had a brisket flat that my friend gave me to throw on..Ran 225 until the packer brisket hit 180ish and then wrapped. Cranked to 250 until it was probe tender (203-205). Damn good and tender..smoke ring could’ve been a little darker but I’m happy with it over all. Bark was on point
Update on my first recteq cook. This puppy took a while to fully render but she was a big one. Well worth the wait. Foil boat method from 180-203ish and rode it out at 250 for the last several hours after leaving it on overnight at 225
First cook on the Backyard Beast 1200 is a pork butt! Started it last night around 8pm At 210…pushing it 250 now and just threw a foil boat on. Sitting at 185 on the meat
Being able to just go to sleep is so clutch after having cooked mostly on an offset previously lol
