First time grow

Hi, I just harvested my first grow.

I would really appreciate some honest opinions. In my opinion, I harvested them a bit too late. Sadly, the veils are already pretty much open in some of them. As I said, I’m a first-time grower, and when I went to sleep yesterday they weren’t that big yet. When I woke up, they had grown a lot, so I got scared and harvested them as soon as possible.

Also, why are some of them so much bigger than the others? Lol

Question regarding harvesting

Hi, I have a question about when to harvest mushrooms from a Golden Teacher grow kit.

From what I’ve read, the best time to harvest is when the veil under the cap has formed and is just starting to tear. Is that correct? I also have a situation where some fruiting bodies are much more developed than others, like in my photo. What should I do in that case? Do you harvest everything at once, or pick only the most mature ones and leave the smaller ones to develop more?

I’d also appreciate any tips for this stage. Should I be increasing fresh air exchange or airing it out more often now? Anything else I should watch out for to avoid drying them out or affecting the next flush?

What do I do if certain jars are going to finish before others?

I have some white golden teachers that some jars will definitely be fully colonized before the others I was going to use in the same batch. Also is there anything that I can do to speed up jars because I have some Steel Magnolia that is at a snail's pace everything looks healthy and white but yeah just incredibly slow slower than I'm used to
