GF desserts that don't need a bunch of specialty flours

Some of the best GF desserts barely need any specialty ingredients at all.

Meringues. Egg whites and sugar. Naturally GF. You can fold in chocolate chips or crushed freeze-dried fruit if you want to get fancy.

Some cookies. I've done a bunch with almond flour recently, but there are so many easy ways to make gf cookies.

What's one GF product you make at home now that you'll never buy again?

Homemade almost always tastes better. That's my baseline. But time is real, and I've made peace with the fact that some store-bought options are worth keeping around.

GF breadcrumbs were the first thing I stopped buying. The homemade version takes ten minutes and tastes completely different. GF pasta was the last thing I gave up on making myself. The store stuff has gotten good enough that the hour it saves me on a Tuesday is worth the tradeoff.
