Is the Lettuce Grow Dolly just the Devault Enterprises 23.5-Inch Heavy Duty Plant Dolly at ~2x the price?

Leafy greens seedlings continuous harvest in a Farmstand

Setting up my Farmstead indoors and looking to order some seedlings for a quick start(I may germinate my own at some point).

Although almost all the leafy green seedlings indicate Harvest Method: Full Harvest, can I just cut the outer leaves for several weeks of continuous harvest? What leafy greens are best for this?
