Tahoma 900

I’ve got a Tahoma 900 and I’m not incredibly happy with it. I’ve checked and double checked that I put it together correctly and everything is good. I’ve had some trouble getting it started but I think I’ve got that figured out now. Here’s my issue. In these pics, I’m doing a rack of ribs. The cooking area has next to no smoke in it, while the fire box area is absolutely silly with smoke. Temp is fine and steady, but how do I get this smoke into the cooking area? The fan is running and moving air just fine.

Sear kings will praise, temp kings will roast.

NY Strips reverse seared. Smoked with hickory until 115°F rested for 9 minutes then seared for 90 seconds on each side over the fire box.

Color internally is darker than Id like but still tender and juicy. The 2 hour dry brine in fridge made a solid impact. Though ideally I do it over night.

Really just happy with the crust I got from the cast iron grill topper.

Highland differences?

Hi all, I’m brand new to smoking, and I recently bought the Highland (the one with the black handles). I’ve been watching a lot of reviews and it looks like the other model has been out for longer.

For those of you with either of these two models, how has your experience been? Are there noticeable improvements or downgrades between the two? Thanks

Remove and replace temp gauge with???

Howdy y’all,

I own a small sandwich shop, and we use a Bronco and a Longhorn to smoke our meats. The question is, what can I replace the OEM thermostats with? I use multiple probes while smoking, so a thermostat is useless. Also, I can’t seem to find anything on the Oklahoma Joe site, Amazon, or at local hardware stores to fill the holes. Any help would be greatly appreciated.

Bronco 2.0 pulled pork enchiladas

Pulled pork from Sunday vacuum sealed, pan fried onions, green pepper, jalepenio, pork, black beans, a little cheese and salsa verde for topping. Yum.
