Replacing shut off valve for washing machine

Do you think I can simply switch these valves that have corrosion on it with new ones? Or would it be more complicated than that?

How difficult would it be to rebuild this P trap?

I’m going to be replacing my sink. The side of the new sink the garbage disposal will be in will sit around 2” lower than current and probably sit back (towards the faucet) an additional 2-3”. It also is a 70/30 sink so it will also be offset laterally a bit too. Would rebuilding this p trap be difficult for a savvy DIYer? TIA Reddit fam!!

Edit: for context, I’m going from a 50/50 sink with the drains in the middle of each bowl to a sink similar to this: https://a.co/d/088vWHyq
