Why are my complications so limited?

I just got an Apple ultra 2 watch. I been looking for some faces and I’m liking this one because it has space for a lot of complications but I can’t add much. Even when I click the middle bottom I see weather but the only option is OFF, if I select anything else that option disappeared. I see lots of other post and ppl having it pretty customized. What am I missing that prevents me from choosing more complications? Appreciate any guidance on this.

Complication recommendation

Does anyone has any suggestions for what I could use instead of the major heart rate complication?

Also im open to any other recommendations to improve my watch face :) .

Im love with my new rdr watch face

I can’t stop looking at the time.
Every glance reminds me of Arthur lying in that rock, facing the west, watching the sun as the credits roll.
Now, every time I check the hour… Arthur is still there, riding his horse on my wrist.
