I need help, I love pot roast potatoes and carrots, I love a good beef stew with potatoes and carrots, (some onion or celery is okay but the focus is potatoes and carrots). How can I find a simple but good recipe for this combination not particularly big on the beef or steak but that's okay too, pot roast is good but I'm 80% more for the vegetables then the meat, I know meat is required for flavor. So asking reddit for tips or help on making a great dish

Questions: either a roast or stew looking for ideas for good full flavor and not too difficult
