Breasts are covered wirh a flambéed marsala, brandy, plum & mushroom pan sauce.
Braised the leg for 6hrs in homemade chicken stock, aromatics and red wine. Cooled, shredded then quickly sautéed with some cooking liquid, cumin, smoked paprika, garlic and lime juice. They did not suck.
