1 lb bear/venison 1 inch cubes

potatoes cubed

baby carrots

1 onion however you want it

1.5 cups water

Spices

2 tbsp Oriental turmeric

1 tbsp ground coriander

1 tbsp ground cumin

1 tsp ground fenugreek

1 tsp black pepper

1 tsp ground cinnamon

1/2 tsp ground cardamom

1/2 tsp ground cloves

1/2 tsp cayenne pepper

1/2 tsp ground ginger

1/4 tsp ground nutmeg

1/4 tsp ground allspice

Rue

5 tbsp butter

4 tbsp flour

1 tbsp ketchup

1 tsp honey

1 tsp soy sauce

1/2 tsp instant coffee

Salt to taste.

braise bear 35 minutes in the instapot. I sear cubes and deglaze with whatever I have on hand. Beer, wine, water.

Saute potatoes carrots and onion. deglaze with something.

Brown butter and flour

Add spices, stir + instant coffee

Add remaining wet ingredients

Add potatoes, onion, carrots, meat

Stir in water combine everything and simmer till potatoes are tender and sauce thickens. About 30 minutes maybe more on low.

Can add water to thin or thicken with little corn starch and water if not thick enough.

If you can't find fenugreek a couple tsp to tbsp of maple syrup would work. Add with other wet ingredients.

I like Jasmine rice with it. Good with nan bread too.

I'm not super good at writing recipes so add something if I forgot it.

Game Dinner

Delicious bounty from last fall, Utah elk loin and Missouri whitetail deer bites

The deer bites are an epic way to use roasts and other less tender cuts. Simple recipe - cut in bite size chucks, wrap in thin bacon then marinate in a 50/50 mixture of Franks Red Hot and Worcestershire sauce. Grill to medium rare (128 degrees). There are never leftovers.

Crockpot BBQ Pulled Venison Roast Sandwiches

Seared a venison roast on all sides, put in crock pot with garlic/onion, combined beef stock, creole seasoning, liquid smoke, mustard, peach jelly we made from a tree in our backyard, and cooked for 8 hours on low. Shredded and topped with some bbq sauce and pickled red onions on a bun. So good!
