
Crappie cakes
I’ve always disliked crab cakes so good thing these are made with crappie! Haha
Poach 1 lb crappie filets in water with 1 sliced lemon and a splash of sherry. Sauté 1 cup diced celery, 1 cup diced onion, and 1 cup diced bell pepper. Drain and press excess liquid from the poached filets, then add the veggies to a bowl with 2 heaping tsp Dijon mustard, 2 heaping tbsp mayo, 2 eggs, Cajun seasoning to taste, and enough Italian breadcrumbs to hold together. Form patties and fry in avocado oil and butter until golden brown on both sides. Serve with lemon or tartar sauce.
