ESO or FFXIV for someone who's not getting to endgame soon?

I'm not a hardcore MMO player and I know it would probably take me months before getting to the endgame content of any of these games since I wouldn't be able to play for more than 3 hours a day, so I wanted to know which game you think that it has a better "journey" and overall experience besides endgame content? Things like combat, dungeons, story, crafting professions, or any other activity that a player can do before getting to max level or the super late game content

Is leveling and questing the only possible goal?

The "only" in the title is not meant to undermine these activities, as I am really enjoying the world, quests, and all that (I'm a new player, so I still haven't discovered much about it yet). I'm asking out of curiosity because I played a bit some MMOs in the past like Runescape and Albion, where you have different kinds of activities that you could focus on from the beginning, like focusing on specific professions, or questing, or certain activities, etc.

Does LOTRO have that variety? And if they do, are they endgame only?
