Aqui estan las respuestas de los productores que participaron en el "Ask me Anything" de abril. Los productores dieron unas super respuestas. Profundizaron de manera extraordinaria en sus procesos, en sus filosofías sobre la producción tradicional frente a la técnica, y en las realidades actuales de la elaboración de destilados de agave en Guerrero, Oaxaca y Durango respectivamente. Son respuestas con perspectiva excepcional aportada por tres mentes brillantes de la industria.

Gracias a todos los que enviaron preguntas tan reflexivas y brillantes. Hicieron de esta una experiencia fantástica para los productores.

Preguntas para los tres:

Q1: ¿Cuántos mezcaleros producen mezcal para su marca?

Erika Meneses: “4 productores: Don Vicencio y Doña Gabi (pareja), Don Benigno, Don Refugio, y yo.”

Leo García: "Solo yo. El “Palenque Guixe” es el único que produce para Macheé. Al principio éramos dos mezcaleros: Chepe Elorza y yo. Desafortunadamente, el Tio Chepe falleció hace un par de años en un accidente trágico. Su hijo y familia participaron en otros lotes después."

Sergio Garnier: "En los inicios de Ultramundo, colaboramos con distintos mezcaleros: Gilberto Rondal, Benjamín Ávila, Juan Manuel Vásquez, y después con Juan Manuel Pérez y su equipo. Actualmente todo lo producimos en nuestra propia destilería en lo que nosotros denominamos colectivo Pelayo donde no es un productor, sino somos todos. No nos consideramos maestros, nos consideramos aprendices. También a veces colaboramos con Benjamín Ávila y con Juan Manuel Pérez para otros proyectos que vendrán aparte de Ultramundo”

Q2: ¿Cuál fue su volumen de producción aproximado en 2025 (total de botellas lanzadas bajo la etiqueta)?

Erika Meneses: “6 mil litros. 1,300 Botellas vendidas en un año.”

Leo García: "Aprox 1,500 botellas nacionalmente."

Sergio Garnier: "El año pasado produjimos un poco más de 4,700 botellas de 750 ml."

Q3: ¿Cuántas botellas planea producir en 2026?

Erika Meneses: “La meta es vender 1,600 botellas.”

Leo García: "1,500 - 2,000 Máximo"

Sergio Garnier: "Este año queremos crecer y lanzar también con nuevas expresiones y esperamos poder llegar al objetivo de 10,000 botellas.’

Q4: Si las cifras de producción de 2025 a 2026 difieren y prevé un crecimiento interanual, ¿cómo piensa mantener dicho crecimiento?

Erika Meneses: “Gracias a nuestros programas de reproducción de agave, tenemos suficiente materia prima para mantener nuestra producción”

Leo García: "Seguramente, conforme se vaya dando más a conocer la marca, va a tener un poco más de demanda. Lo que me corresponde a mi es vigilar ese tema de la producción. Desde un principio, el objetivo de Macheé nunca fue producir volumen sino producir calidad, respetar tiempos, respetar el proceso del maguey, respetar todo eso. Entonces lo que me corresponde al crecer la demanda es detenerme un poco, analizar qué es lo que podemos hacer, que es lo que no podemos hacer y seguir dándole así”

Sergio Garnier: "Nuestro límite de crecimiento lo marca la cantidad de agave que podemos extraer de manera sustentable a través de nuestro programa de aprovechamiento y nuestra capacidad de producción de la destilería (la cual todavía planeamos expandir). Todavía no hemos llegado a ese límite. La demanda todavía sigue creciendo pero cuando lleguemos a nuestro tope de producción, pues ya de ahí no podremos crecer más, al menos en en lamparillo”

Q5: ¿Confía en que el mercado global los cuidará, su gente y su estilo de vida? Si no es así, ¿cómo piensa conciliar sus intereses con los del mercado global?

Leo Garcia: "Yo pienso que hay mercado para todos y para todo. Por ejemplo, hay palenques que sí trabajan con volumen grandes y que sí pueden cubrir esas demandas. Pero lógicamente, el estilo de vida de esos productores es diferente ya que ellos están enfocados 100% a la producción. En mi caso, nosotros respetamos el tema de la producción porque no solo me dedico a producir. Me dedico a otras actividades también, por ejemplo, yo mismo hago las ventas, hago las visitas a los lugares en donde se vende la marca, gestiono redes sociales, etc. Entonces no creo que en algún momento nos afecte el tema de la producción en volumen.”

Sergio Garnier: "Yo creo que el mercado ve por el mercado. Yo me siento responsable de cuidar a mi gente, a mi comunidad, y a mi entorno. Lo que sí creo es que un consumidor más consciente va a buscar productos que tengan esa responsabilidad con su comunidad. Entonces, más que hablar del mercado, a mi me gusta hablar más de un consumidor consciente que sepa lo que está tomando, de dónde viene lo que toma, las prácticas y procesos para hacerlo, etc. Y pues cuando el productor es el mismo dueño de la marca, para mí es el esquema ideal donde donde capitaliza todo y todo ese margen se queda pues con la misma gente que lo producimos”

Q6: ¿Cuál es su plan para afrontar la presión de las exigencias de crecimiento derivadas de la globalización, especialmente cuando esta demanda supera los volúmenes de producción tradicionales?

Erika Meneses: “Nosotros respetamos los tiempos de maduración de los agaves. No estamos produciendo a la demanda de la globalización. Vamos con el calendario de la tierra”

Leo Garcia: "Como lo decía en la pregunta anterior, Macheé nunca ha sido para producir volumen. Con Macheé, nunca he pensado en la producción a gran escala. Me refiero de 6 mil - 8 mil botellas al año porque eso ya sería una producción grande para nosotros. Seguramente si podemos producir un poco más de lo que hemos producido en este último año tomando como referencia el 2025 y los meses que van del 2026. Mi idea siempre ha sido que en su momento dado, pueda apoyar a otros productores para que se puedan dar a conocer sus productos a través de la marca Macheé. En algún momento, a mi me apoyaron muchas personas (y lo siguen haciendo), entonces ¿por qué no darle la misma oportunidad y apoyo a otros productores? Cuando llegue ese momento, ya pensaríamos en volumen pero serían 10 mil botellas pero entre 6 o 7 productores. Sería algo muy chingón tener a más productores en este proyecto."

Sergio Garnier: "Mi límite de producción, como lo comentaba, lo va a marcar la cantidad de agave que yo puedo aprovechar de manera regenerativa con mi programa de aprovechamiento y sin impactar la región con presión. Yo soy privilegiado porque tengo acceso a una gran superficie de tierra en una zona desértica entonces eso nos permite tener esa variable. Pero la cantidad de agave es lo que va a marcar mi límite. Y si llegara a ver más demanda pues nosotros siempre vamos a estar limitados a eso. Nosotros calculamos alrededor de veinticinco mil botellas como nuestro límite”

Q7: ¿Cuáles son tus tendencias favoritas que has visto recientemente en la industria? ¿Sobre qué temas te entusiasma más enseñar personalmente al compartir tu marca?

Erika Meneses: (Creo que mal entendió la pregunta pero la respuesta es buena)
“Lo que yo he visto es que todos quieren ser parte del boom del mezcal. Todos quieren tener su marca y a todos les quieren llamar "mezcales artesanales" o "mezcales tradicionales", cuando en realidad son lo que yo llamo "mezcales prostituidos". El problema es que buscan obtener títulos de mezcal a través de talleres que ofrecen sólo teoría pero es una teoría “hueca", sin tener una experiencia basada en la realidad. Esa es una tendencia que yo he visto mucho y que está muy desequilibrada. Entonces, ese sería mi punto de vista. 

A mí, lo que más me gusta es hablar de todas las tradiciones y la cultura que rodean al mezcal. De las raíces, de la herencia; de lo que nos hace ser parte de este producto. Pero, más que nada, nuestra misión es transmitir de forma correcta lo que es la vida del campo. Queremos mostrar lo que es la parte de ser un productor, un pequeño productor y un productor campesino, ¿sabes? Tenemos que recordar que nuestra misión es transmitir de forma correcta lo que es el mezcal tradicional, pero también me gusta hablar de las características que nos hacen únicos: el gusto de cada familia, el gusto de cada maestro. Siempre es importante no solo hablar de mí, sino de todas las personas y familias que conforman el producto y hacen posible que esto se mueva. Ningún producto tendría sentido sin su gente. La misión es concientizar a la gente y hacer que valoren ese esfuerzo que hace cada maestro o cada familia de conservar una tradición para que no se pierda lo poquito que queda.”

Leo Garcia: "Yo he visto que se están abriendo muchas puertas directamente para los productores. Antes había lugares (restaurantes, bares, ciudades) en los cuales ni soñaba poder llegar. Lugares a los que llegaban marcas de mucho renombre o marcas que ya tenían un buen posicionamiento en el mercado. Entonces ahora se están dando pequeños espacios en los cuales nos están dando chance. Creo que este mundo se está ampliando más y el conocimiento se está ampliando por lo mismo también y es gracias a que ya existe ese vínculo directo con el productor. Eso es muy bueno. ¿Y qué me entusiasma enseñar? Pues la verdad es que siempre me gusta hablar de nuestro proceso. Nuestro proceso es muy especial por el tipo de destilación con “Refrescadera” que usamos. Eso hace que nuestro mezcal tenga sabores y aromas muy complejos gracias a el cuidado que le ponemos a lo largo de nuestro proceso. Por ejemplo, la siembra de nuestros magueyitos, nuestro propio captador de agua, el tiempo de reposo que le damos al mezcal en vidrio por un mínimo de 6 meses aunque normalmente es más, utilizar y reciclar el bagazo (desechos de fibras de agave) para la elaboración del papel que hacemos a mano para las etiquetas. Todo eso me gusta platicar para que la gente sepa que no nada más es es mezcal y ya. Nos enfocamos en otras cosas que al final de cuentas, es es algo que nos beneficia”

Sergio Garnier: "A mi me gusta mucho el tema de la transparencia. Me gusta ver todo el proceso, ver que hay detrás de ese mezcal que estás probando, la gente, las técnicas etc. yo creo que eso es el nuevo “premium” y no una botella bonita o un buen marketing. Creo que el nuevo “premium” es un producto auténtico, hecho de manera tradicional. Esa tendencia me encanta. Algo que me llama la atención también es que empiezo a ver marcas que en sus etiquetas no ponen el nombre de un maestro mezcalero sino ponen el nombre de todas las personas que participan en la producción. Eso es lo que nosotros hacemos. No nos caben los nombres de todos pero nosotros ponemos “Colectivo Pelayo” y en nuestra página web, pueden encontrar la foto y nombre de cada persona que es parte de este colectivo. Y sobre todo más conciencia sobre el respeto al entorno y medio ambiente. Esas son las tendencias que estoy viendo y me gustan mucho. Otro tema que me interesa mucho es la relación con el arte y la cultura local que es algo que buscamos hacer en Ultramundo. Colaboraciones con artistas, buscar crear expresiones nuevas, buscar quedar nuevos sabores, y sobre todo informar más al cliente o al consumidor sobre lo que se está tomando y todo lo que eso conlleva”

Q8: Cuáles son las tendencias en cuanto a la sostenibilidad a largo plazo del suministro de agave? ¿Cómo equilibran la demanda actual de producción con la viabilidad a largo plazo de cada especie de agave? ¿Hay algún maguey que estén evitando debido a que ha sido objeto de una sobreexplotación?

Erika Meneses: “En el caso de Aguerrido, solamente se seleccionan magueyes maduros para elaborar nuestro mezcal. Se respeta el “calendario” que la misma tierra nos establece para elegir magueyes maduros. Una planta siempre va a tener diferentes variantes, por ejemplo, dependiendo si la zona donde está creciendo es una zona fría o con más calor, o si el maguey está en tierra pedregosa, o los minerales que rodean el agave, todo esto es un factor importante en lo que es la maduración de la gave. Para equilibrar la demanda, solo trabajamos en temporadas de seca, sin trabajar todo el año, lo que resulta en lotes muy pequeños y únicos. Nuestra práctica clave es la preselección de agaves maduros para producción y para el banco semillero, evitando el corte indiscriminado y realizando reforestaciones. Ponemos especial cuidado en especies endémicas en peligro de extinción, como el maguey calabacita y zacatoro, estos los cultivamos en nuestro vivero. De estos magueyes raros, solo elaboramos lotes extremadamente pequeños, como 20 litros por año, supervisados por un único productor para asegurar su conservación.”

Leo Garcia: "En un principio, cuando el mezcal empezó a tener más visibilidad, la preocupación era que se fuera a acabar el maguey pero afortunadamente hay proyectos que se han dedicado a la preservación de magueyes. En nuestro caso, tenemos ciertas variedades de maguey sembradas y estamos cuidando esa parte. Lo que sí va a pasar en un futuro próximo es que va a haber muy poco maguey silvestre, la mayoría va a ser maguey cultivado o semi-cultivado. Ahorita hay proyectos muy interesantes y nosotros estamos tratando de implementar eso. Tenemos nuestros propios magueyitos para que en un futuro podamos producir con ese tipo de magueyes semi-cultivados. Por ejemplo, los magueyes que son escasos son los Tepextates, Jabalís (por nuestra zona), Coyotes, ese tipo de de magueyes. Pero la mayoría ya siembra. Puede que en unos años ya va haber más magueyes de esos pero si va a haber un cambio significativo en cuanto crecimiento o desarrollo de de la planta y en cuanto el rendimiento de producción de mezcal por el tipo de cultivado. Pero estoy seguro que muy pocas variedades son las que se van a perder por completo.”

Sergio Garnier: "En cuanto a suministro de agave, nosotros somos un caso muy particular porque nosotros integramos todo desde la tierra hasta el producto final. Nosotros integramos y operamos todo el proceso. Ha sido muy desafiante y por eso es que nuestra marca ha tenido un ritmo de crecimiento relativamente lento. Y solo trabajamos con un tipo de agave que es el que crece ahí con nosotros que es el lamparillo. La otra planta que crece en nuestra propiedad es el sotol. vendrán expresiones también usando esta planta. Nosotros estamos reforestando con lamparillo las zonas más erosionadas y estamos revirtiendo la desertificación. Estamos a la inversa de lo que pasa en otras zonas donde se están devastando áreas con mucha biodiversidad para ser monocultivos de agave. Nosotros creemos en respetar el entorno tal y como está para que la calidad y sabor de nuestro producto siga siendo el mismo”

Q9: ¿Afectan los cambios estacionales a sus recursos o a la producción de mezcal?

Erika Meneses: “Lo que hacemos es trabajar por temporadas, solo en los meses de secas. Necesitamos que no llueva y que haga calor, lo que reduce nuestra producción a unos tres meses al año porque ahorita los cambios climáticos están súper locos. El frío se va hasta febrero, así que empezamos a finales de febrero y terminamos a principios de junio, antes de que lleguen las lluvias.

Cuando llueve, tenemos que parar, ya que nos afecta de varias formas:

• Logística: Es muy difícil acceder a las tierras para traer el maguey de los cerros.
• Rendimiento: Si no hay mucho sol, la fermentación se alarga. Además, el maguey capta agua, lo que baja los azúcares y reduce el rendimiento.

Por eso, solo trabajamos en la temporada de secas, porque es cuando resulta más rentable.”

Leo Garcia: "Sí, sí afecta bastante. Nos afecta cuando no llueve mucho, nos afecta cuando llueve bastante,  nos afecta también, por ejemplo ahora cuando hace mucho frío, se quemaron unos magueyes. Todos esos cambios climáticos que está habiendo va afectando a la producción. Sin embargo, nosotros todavía seguimos guiándonos por las temporadas. Nada más producimos en temporada de calor pero por ejemplo, hace dos años no llovió mucho entonces hubo una temporada de producción más continua y prolongada que nos dió la oportunidad de sacar mezcal más constantemente. Pero pues sí, todo eso sí va afectando.”

Sergio Garnier: "Los cambios estacionales impactan directamente en nuestra producción. Están totalmente interrelacionados. Empezando por: 

• Los tiempos de capado que nos marca la primavera. Nuestros agaves sobreviven máximo un año cuando son capados y solo producimos con agave capado. 
• Nuestra fermentación es natural, entonces cada estación trae distintos microorganismos y eso hace que cambien los sabores. 
• Nosotros tenemos temperaturas muy extremas. En el invierno llegamos a temperaturas incluso bajo cero que nos alentan mucho las fermentaciones, producen sabores muy distintos y en el verano tenemos  fermentaciones rápidas que dan otros tipos de sabores.
• En épocas de lluvias (que son pocos días pero cuando las tenemos) tenemos que parar toda la producción.

Nosotros tenemos que aprovechar muy bien los tiempos porque solo tenemos de ocho a diez meses para aprovechar los agaves que capamos en cada temporada”

Q10: ¿Cómo les gusta pasar el tiempo durante la destilación? ¿Qué los mantiene despiertos durante esas largas horas?

Erika Meneses: “Lo que yo te diría es que siempre hay muchísimas actividades por hacer. Cuando estás destilando, no te quedas estático ni durmiendo. En lo que el destilado está a fuego lento, nosotros andamos en una rotación constante:

• Cargando el horno de maguey o partiendo leña.
• Yendo por leña, acarreando más maguey, o trayendo piedra nueva o palma.
• Moliendo maguey para llenar tinas nuevas o componiendo otros lotes de mezcal ya destilados.
• En el caso de las mujeres, también están haciendo la comida o viendo los animales, los pollos y los hijos.

Llevamos una vida normal, pero con jornadas muy largas. Trabajamos hasta las 12:00 de la noche, descansamos de las 12:00 en adelante, y volvemos a las 6:00 de la mañana. La jornada se va rápido porque siempre hay algo que hacer, siempre hay mucho movimiento, incluso llegan visitas a la fábrica. Cuando ya estamos muy cansados, claro, alguien más nos releva para que podamos descansar, porque son demasiadas horas de trabajo.”

Leo Garcia: "Pues cuando se está destilando, hay que estar cuidando mucho el fuego. Hay que estar muy muy atento a cómo está cayendo el mezcal entonces la única opción que tenemos pues es platicar al menos que estemos preparando otro lote al mismo tiempo. Pero la mayoría de las veces pasamos el tiempo cuidando el fuego y platicando con las personas que nos encontramos en la en el momento de destilar. A veces nos turnamos para descansar un poco porque sí son jornadas largas y pesadas”

Sergio Garnier: "En nuestro caso es descansando, comiendo, y trabajando. Nuestra destilería se encuentra en medio de la nada, entonces el equipo de la destilería vive ahí. Entonces buscamos distintas actividades que podamos hacer siempre tratando de que sean en horarios apropiados y tomar los tiempos de descanso y de comida. A veces repente nos dedicamos tiempo a cocinar, a cuidar y regar el huerto, revisar el vivero y ese tipo de cosas”

Q11: En su zona, ¿la palabra «mezcal» también hace referencia al agave cocido como fuente de alimento? De ser así, ¿existen preparaciones preferidas para consumirlo?

Erika Meneses: “En nuestra región no se usa la palabra “mezcal” para referirse al agave cocido y normalmente aquí no se utiliza para hacer ningún platillo y comerlo. No se conoce de esa forma. Creo que es más en Oaxaca.”

Leo Garcia: "Para nosotros, el mezcal es el líquido en sí. Ya lo demás es maguey cocido pero no lo usamos para otra cosa, nada más lo utilizamos para hacer mezcal”

Sergio Garnier: "Acá en nuestra zona le llaman “Queote”. Si se acostumbra todavía en algunas zonas pero no es muy popular. Pero no le llaman “mezcal” le llaman queote o también se le dice “cajeta” al maguey cocido”

Q12: En su producción de mezcal, ¿prefieren mantener la constancia en sus prácticas o les gustan las variaciones y los cambios?

Erika Meneses: “Sí, normalmente cada año tenemos bien perfilado lo que vamos a hacer. La mayoría de nuestros lotes son de maguey cupreata o Capón, ya que es el maguey endémico aquí de Guerrero y de nuestras comunidades. Pero también nos gusta experimentar. Nos hemos salido de lo que era puramente tradicional y solo se hacía puro cupreata. Hacemos cambios con este agave, como pechugas y destilados con fruta. Hacemos lo que yo llamo "juegos de receta", por así decir, como cuando estás en la cocina y le pones un ingrediente nuevo. Por ejemplo, hemos hecho macerados con chumilín, con torito y con nazares. Así obtenemos lotes distintos a los comunes o tradicionales. Además, el mercado nos pide pechugas o destilados diferentes y, al ir haciendo la práctica, vamos viendo cómo funciona el cupreata combinado con otras cosas. Creamos esa variación para los lotes nuevos, sin basarnos solo en la práctica tradicional de la región.”

Leo Garcia: "Tratamos de mantener nuestras prácticas. Pero cada lote, lógicamente, es muy diferente porque es un proceso artesanal y hay factores que varían como el clima y el maguey. Entonces va cambiando cada lote y por eso es que el sabor de cada lote varía un poquito. Pero no nos gusta cambiar nuestras prácticas mucho. Lo que sí nos gusta es hacer lotes diferentes. Por ejemplo los “destilados con” y en nuestro caso, hay algo que nos está empezando a distinguir y es que nosotros hacemos los “fermentados con”. Tenemos el Cuishe fermentado con mango, fermentado con piña ya que le agregamos la fruta al momento de fermentar y en ocasiones, aventamos la fruta desde que se está machucando el maguey. Entonces en esa parte, si nos gusta experimentar pero en cuanto al proceso no cambiamos prácticamente nada.”

Sergio Garnier: "El mismo entorno nos forzó a hacer adaptarnos a él. Cómo lo comentaba anteriormente, la estacionalidad afecta el paso de la fermentación pero nosotros nos apegamos al método tradicional. Actualmente tenemos una etiqueta y no hacemos cambios. Nosotros consideramos que el mezcal es un producto vivo y lo dejamos que se exprese en cada lote de la manera en que la misma tierra y el entorno nos lo manifiestan. Cada lote de nosotros sale a un grado de de alcohol distinto porque prácticamente no lo rectificamos o ajustamos. Pero nuestro proceso estándar es muy fijo. Lo único donde hay más variación pues es en la en la fermentación”

Q13: ¿Ustedes, o personas que  conozcan, beben mezcal con una graduación alcohólica (ABV) en el rango del 20% al 35%? Si la normativa (de EE. UU.) no exigiera un grado más alto, ¿elaborarían ustedes mezcales con menor graduación? Tengo curiosidad por conocer las preferencias regionales.

Erika Meneses: “Las graduaciones que manejamos en las comunidades, las tradicionales, son normalmente de 47 o 53 ABV. Los mezcales que encuentras en las tienditas no son de una graduación tan alta. Mucha gente se confunde y piensa que los mezcales de alto volumen alcohólico llevan alcohol de caña. Incluso, hay gente de nuestra propia región que no sabe tomar mezcales de graduaciones altas porque está más familiarizada con los de baja graduación. Si bien, a los maestros más viejos sí les gusta tomar las puntas, la gente que no está familiarizada con la producción desafortunadamente prefiere los mezcales de graduaciones bajas. Nosotros ya trabajamos estas graduaciones altas mucho antes de entrar al mercado de Estados Unidos, porque los mezcales tradicionales/originales no son de graduación baja. Por eso, no describimos nuestra graduación como alta, sino como la graduación normal de un mezcal tradicional, a diferencia de los mezcales industriales cuya característica siempre es tener una graduación alcohólica baja.”

Leo Garcia: "Acá en Oaxaca se habla mucho de eso. Se habla mucho de las graduaciones bajas y muchos dicen que es “mezcal malo” y que nadie lo toma. En nuestra población, nosotros sí estamos acostumbrados a tomar mezcales de 48%, 50%, 55% grados. Entonces se pudiera decir que elaboramos el mezcal de una manera “normal” pero las marcas de graduaciones bajas varían porque hacen el ajuste alcohólico después de la producción. Nosotros preferimos sacarlo a la graduación de 48-55% porque en esa graduación se perciben más los aromas, se perciben más los sabores y a la vez no es tan agresivo en el paladar.”

Sergio Garnier: "En mi región no se consume el mezcal a esa graduación. Creo que hay algunas marcas comerciales que llegan a venderlo en 35% abv. No son muy populares. El caso más cercano que se es en San Luis Potosí donde consumen lo que ellos llaman “vino mezcal” en graduaciones de 20-30% abv, incluso a menor de 20% abv. pero no recuerdo exactamente el grado alcohólico” 

Q14: ¿De qué te sientes más orgulloso al compartir tu mezcal? ¿Qué dirías que distingue a tu mezcal y a tu marca de los demás?

Erika Meneses: “Lo que más distingue a nuestra marca y a nuestro mezcal es nuestra forma de elaboración: producimos lotes pequeñitos y únicos. Somos mezcales tradicionales de Guerrero y trabajamos con prácticas de elaboración muy bien definidas. Lo que nos hace diferentes es que nuestros mezcales están muy bien hechos, con buenos sabores y buenas notas, porque cuidamos muchísimo la producción.”

Leo García: “Lo que me enorgullece más es nuestro compromiso de darle prioridad a la calidad y el respeto hacia todo el proceso de producción: desde la siembra de los magueyitos y la selección de plantas maduras, hasta la destilación a fuego lento y la maduración del mezcal en vidrio de 6 a 12 meses en promedio. También cuidamos detalles como el reciclaje del agua de la refrescadera y el uso de las fibras de agave para nuestras etiquetas hechas a mano. Nuestro enfoque siempre ha sido la excelencia sobre el volumen, lo cual nos distingue. Además, logramos perfiles muy complejos gracias a nuestro método de refrescadera y a que experimentamos con la fermentación del agave con fruta en lotes especiales, en lugar de solo agregarla durante la destilación como se acostumbra normalmente.”

Sergio Garnier: "Me hace sentir muy orgulloso retomar una tradición que prácticamente había desaparecido en mi región. Me refiero a la producción de mezcal con maguey lamparillo. Y yo me siento muy privilegiado porque antes de ser productor de mezcal, soy un aficionado del mezcal. Y brindar un mezcal para esos aficionados que les gusta mucho un perfil tan peculiar, tan diferente, tan distintivo como el lamparillo (que son los sabores de esta tierra), a mí me hace sentir muy orgulloso. Además, la manera en la que lo estamos haciendo; que no solo no impacta de manera negativa ambiente sino que estamos buscando un beneficio para para la biodiversidad y para la comunidad”

Q15: ¿Cuáles son algunos de los elementos locales de sus regiones específicas en Guerrero, Oaxaca o Durango que, a su juicio, dan a su mezcal su esencia singular y lo distinguen de otros productos de su zona (aparte del maguey que utilizan)?

Erika Meneses: “Creo que lo que hace muy especial a nuestro mezcal es el gusto y la mano de cada maestro o familia. Esto se refleja en cómo componemos el mezcal y en la graduación que le damos. Ese toque personal es el factor que hace que nuestros mezcales sean distintos, aunque trabajemos el mismo agave. Sucede que somos de distintas comunidades y los usos y costumbres de cada región son diferentes. Podemos ser del mismo municipio, pero la forma en que trabajamos es distinta. Esos factores son los que, al final, marcan la diferencia entre los destilados que elabora cada familia.”

Leo Garcia: “Yo siempre lo he dicho: en nuestro caso, somos afortunados por estar en una región en donde se utiliza la “refrescadera”. Aparte de que tenemos la bondad tierra que nos brinda mucho maguey, en especial el Karwinskii, la refrescadera también nos ayuda mucho porque hace que nuestros mezcales se distingan o tengan esa particularidad en comparación con otros. El hecho de destilar una sola vez y utilizar los famosos “platos” que están dentro de la refrescadera, nos permite que los aromas y los sabores están más presentes. Son mezcales más densos con mucho más aroma y mucho más sabor que a comparación de los que se destilan dos veces.”

Sergio Garnier: "Bueno, aparte del maguey (que es bastante único), yo creo que el “viejo” de madera es un elemento muy interesante para el cual usamos madera de sabino. También usamos madera de sabino con las tinas de fermentación que son tinas tipo tumba enterradas; son tinas pequeñas. Y pues todo lo que conforman los sabores de nuestro lugar, como la biología local que va cambiando por estaciones pero que siguen siendo sabores del desierto”

Q16: ¿Qué significa para usted el título de Maestro o Maestra Mezcalera? ¿Se trata simplemente de la persona que dirige el proceso de producción, o conlleva un significado más profundo?

Erika Meneses: “La palabra "maestra" o "maestro mezcalero" se le asigna a la persona que está al frente de la producción y elabora el mezcal. Cuando iniciamos el proyecto, no estábamos acostumbrados a usar esa palabra; entre nosotros nos llamamos por nuestro nombre. De hecho, hasta la fecha, aquí en la región usamos más la palabra "don" o "doña" (como "Doña Erica," "Don Refugio," "Don Vicencia") que la de "maestro" o "maestra". Esa palabra nos la asignan más los clientes y la gente externa, sobre todo en el mercado de la Ciudad de México. Aunque sí es algo que distingue a quienes producimos mezcal aquí, hay otras regiones que nombran de otra forma a quien lo produce.”

Leo Garcia: ““Maestro mezcalero" es una palabra nueva, una palabra que no tiene mucho tiempo desde que la implementaron. La verdad es que a mí no me gusta que me digan así. Me gusta más que me digan “Leo” nada más. Anteriormente se le conocía como “el productor” o en los pueblos se le dice más como “el que saca mezcal.”

Sergio Garnier: "Yo tengo mucho respeto por los maestros mezcaleros. Yo no me considero como tal. Yo me considero una aprendiz, un productor de mezcal. Como yo lo entiendo, “Maestro” tiene significado de “profesor”, de alguien que enseña a otros. Y es alguien que ha recibido conocimientos de generaciones atrás y que después ha decidido compartirlo. Para mí eso significa ser maestro, dirigir un equipo. Bueno, también he conocido también maestros que prácticamente hacen todo su proceso. Pero si ves nuestras etiquetas, no viene el nombre de un maestro mezcalero, viene el nombre de nuestro colectivo porque en el caso de nuestro proyecto, no hay un maestro en sí. Los maestros son quienes me enseñaron y yo trato de compartir lo que he aprendido con mi equipo. Pero esos son los verdaderos maestros, los que a mí me enseñaron a ser mezcal y de los que sigo aprendiendo todos los días”

Q17: ¿Cuál es su opinión sobre la tendencia de algunas grandes marcas de tequila de lanzar expresiones alineadas con métodos de producción artesanales o tradicionales (como los lanzamientos de "Dobel Tahona")? ¿Considera esto una amenaza para la industria del mezcal o un cambio positivo para los destilados de agave?

Erika Meneses: “De hecho, ni ubicamos la marca de tequila que nombran en esta pregunta. No consideramos que sea una amenaza para nosotros porque obviamente tenemos diferentes mercados. Nosotros no entramos en donde entran las bebidas industriales. Nuestro mercado es de mezcales tradicionales y es un mercado más reducido pero es un mercado más selectivo. Nuestro mercado es de gente ya con un paladar avanzado y eso facilita a nosotros hacer la conexión de las ventas. Nosotros no lo consideramos como una amenaza realmente ni ubicamos la marca. Así como dicen por ahí “no los topamos”, no sabemos nada de ellos.”

**Leo García: “**No es amenaza, siempre habrá una gran diferencia entre el tequila y el mezcal. De entrada, el tequila siempre es y será producciones en gran volumen y el mezcal, en mi caso, puedo decir que se caracteriza por ser de pequeños lotes y lógicamente, el cuidado que se le da a cada proceso es muy distinto. Otra diferencia es el tipo de maguey, en Oaxaca somos afortunados porque tenemos el mayor número de variedades de maguey entonces eso es lo que caracteriza al estado más allá de en qué estado se empezó a destilar. Lo que ahora hacen con el tequila entonces no es un tema de lo “artesanal”, es más bien un tema de marketing, de buscar que los volteen a ver. Pienso que como en muchas casos solo es un discurso, habría que ver en un tema más científico que es “artesanal” y “tradicional” para ver quién sí y quien no califica para poner esa palabra al menos en su etiqueta.”

Sergio Garnier: "Pues por un lado se me hace algo positivo. Quiere decir que la gente está buscando lo que estamos haciendo. Es simplemente un oportunismo para darle a la gente algo distinto darles algo que tenga más tintes auténticos cuando realmente no lo es pero viéndolo desde el punto de vista de de creo que es bueno porque sigue sigue promoviendo las técnicas y los procesos artesanales que hacemos y eso eventualmente acercará a los consumidores al auténtico porque esta tiene mucho más alcance de los que de lo que podemos tener nosotros como productores independientes entonces a la larga que es algo bueno porque la gente no es tonta y se habrá distinguir”

Q18: ¿Su enfoque de producción es más técnico y preciso, o más intuitivo y arraigado en la tradición? ¿De qué manera?

Erika Meneses: “La producción que nosotros tenemos es más tradicional. Lo que hacemos es conservar la tradición lo más que se pueda para no perderla. No nos tratamos de meter en cosas técnicas de otras personas o personas que aprenden a hacer mezcal a través de cursos. Nosotros no entramos en ese rubro ni con los certificadores de Comercam. Nosotros hacemos nuestro mezcal de forma tradicional y no lo quisiéramos hacer de otra forma”

**Leo García: “**Yo me baso en la tradición, hago las cosas como me enseñaron y me guío por la intuición y el conocimiento práctico. Creo que esa es la esencia de un buen mezcal. Ahora ya hay aparatos que con mayor precisión te pueden apoyar en ciertos puntos del proceso pero en mi caso es mejor utilizar los sentidos y el conocimiento para decidir desde qué maguey está maduro hasta que graduación tiene tu mezcal usando la venencia.”

Sergio Garnier: "Mi enfoque definitivamente va más por el lado técnico. Yo no tengo ese don, yo no tengo ese linaje, esa tradición. Yo tengo 6 años en esto,  aprendiendo el oficio. Y me he tenido que ir por el enfoque técnico tratando de medir lo que puedo, tratando de investigar, además de que en mi región esta tradición de trabajar con Lamparillo no es tan común con otros productores. El Lamparillo es un animal muy difícil de domar entonces mi “approach” va por ese lado.”

Q19: ¿Cuál es el paso más delicado de su proceso, aquel en el que las cosas pueden salir mal con mayor facilidad? ¿Cómo gestiona un lote que no cumple con sus estándares de calidad?

Erika Meneses: “Personalmente, la fermentación es el paso más delicado de nuestra producción porque es donde surge toda la magia que nos va a generar el alcohol. Pero si no sabes preparar la tina, o no sabes poner la cantidad de agua adecuada, o no sabes probar el “caldillo”, se te puede arruinar la tina y no te va a dar nada, no va a generar mezcal. Otro ejemplo es que si no se utiliza agua dulce, las levaduras no van a arrancar. Hay muchos factores que influyen. Otros ejemplos pueden ser que no debes llevar perfume en la ropa, no debes llevar pintura en las uñas, no debes de comer limón cerca de las tinas porque, a pesar de que pudiera ser una creencia local, es algo muy real que hemos visto; si le cae limón a las tinas, detiene la fermentación. Cuando hay un lote que no sale de la calidad que estamos acostumbrados a manejar dentro de la marca, normalmente esos lotes se dejan para venta en la comunidad o para las fiestas patronales, para cumpleaños, etc. Lo que hacemos es guardarlo en garrafones de cristal para que asiente y dejamos que sus sabores se alineen. A veces sólo requieren más reposo y más tiempo. Los dejamos ahí un ratito en un lugar fresco para que se puedan sacar a la venta después. Pero normalmente los usamos para venderlos por litro en comunidades o para venderlo por copita ya que no cumplieron el estándar que se maneja dentro del proyecto”

Leo García: “Todos los pasos del proceso requieren mucha atención, desde la selección del maguey hasta la destilación, en la cocción debes de saber la porción de leña que pondrás para que tu maguey se cocine como debe de ser, sin que se queme o te salga crudo, en la fermentación saber en qué momento agregar agua y en qué momento ya esa lista tu tina para destilar y en la destilación estar muy atento al fuego y en nuestro caso al agua que se le está poniendo para que refresque. En mi caso si algún lote no me convence al 100 pues lo dejamos un rato guardado y se ve cómo evoluciona.”

Sergio Garnier: "Definitivamente la fermentación siempre ha sido nuestro punto crítico, sobre todo porque estamos en una región donde el clima varía de manera drástica y repentina. Yo creo que la fermentación es donde la magia sucede y es donde menos control tenemos. En ese paso, tenemos que dejar a la tierra que haga lo suyo. Normalmente los lotes que no cumplen nuestros estándares de calidad no los liberamos o los re-procesamos”

Answers are here!

Between a crazy couple of weeks on my end and the sheer amount of incredible information our panel shared, this turned into a much bigger task than I anticipated. So I owe you all an apology for being a week late on this!

By the time I finished gathering answers from Erika, Leo, and Sergio in audio format, and transcribing and translating all of their responses, I ended up with a 16-page word document.

The delay is completely on me, but I promise you the wait was worth it. The producers didn't hold back. They went incredibly deep into their processes, their philosophies on traditional versus technical production, and the realities of making agave spirits in Guerrero, Oaxaca, and Durango today. It is truly a great insight from three brilliant minds in the industry.

Thank you to everyone who submitted such thoughtful and brilliant questions. You guys made this a fantastic experience for the producers.

QUESTIONS TO ALL THREE PRODUCERS:

Q1: How many mezcaleros produce mezcal for your brand?

Erika Meneses (Aguerrido): “4 Producers: Don Vicencio and Doña Gabi (they are a couple), Don Benigno, Don Refugio, and myself.”

Leo García (Macheé): Just me. “Palenque Guixé” is the only one producing for Macheé. At first, there were two of us: Chepe Elorza and me. Unfortunately, Tio Chepe passed away in a tragic accident a couple of years ago. His son and family participated in other batches later on.

Sergio Garnier (Ultramundo): “In the early days of Ultramundo, we collaborated with different mezcaleros: Gilberto Rondal, Benjamín Ávila, Juan Manuel Vásquez, and later with Juan Manuel Pérez and his team. Currently, we produce everything in our own distillery in what we call the “Pelayo Collective”, where it's not just one producer, but all of us. We don't consider ourselves Maestros; we consider ourselves apprentices. We also sometimes collaborate with Benjamín Ávila and Juan Manuel Pérez for other projects coming up outside of Ultramundo.”

Q2: What was your approximate production volume in 2025 (total bottles released under the label)?

Erika Meneses (Aguerrido): “6,000 liters. 1,300 bottles sold in one year.”

Leo García (Macheé): “Approx. 1,500 bottles nationally.”

Sergio Garnier (Ultramundo): “Last year we produced a little over 4,700 750ml bottles.”

Q3: How many bottles do you plan to produce in 2026?

Erika Meneses (Aguerrido): “The goal is to sell 1,600 bottles.”

Leo García (Macheé): “1,500 - 2,000 maximum.”

Sergio Garnier (Ultramundo): “This year we want to grow and also launch new expressions; we hope to reach the goal of 10,000 bottles.”

Q4: If production figures differ from 2025 to 2026 and you foresee year-over-year growth, how do you plan to maintain that growth?

Erika Meneses (Aguerrido): “Thanks to our agave reproduction programs, we have enough raw material to maintain our production.”

Leo García (Macheé): “Surely, as the brand becomes better known, it will have a bit more demand. My responsibility is to monitor that production aspect. From the beginning, Macheé's goal was never to produce volume but to produce quality, respect times, respect the maguey process, respect all those things. So, as demand grows, what I need to do is stop for a moment, analyze what we can and cannot do, and keep going that way.”

Sergio Garnier (Ultramundo): “Our growth limit is set by the amount of agave we can extract sustainably through our management program and our distillery's production capacity (which we still plan to expand). We haven't reached that limit yet. Demand is still growing, but when we reach our production cap, well, we won't be able to grow any further from there, at least not with Lamparillo.”

Q5: Do you trust that the global market will look after you, your people, and your lifestyle? If not, how do you plan to reconcile your interests with those of the global market?

Erika Meneses skipped this one.

Leo García (Macheé): “I think there is a market for everyone and everything. For example, there are palenques that do work with large volumes and can cover those demands. But logically, the lifestyle of those producers is different since they are 100% focused on production. In my case, we respect the production aspect because I do many other things in Machee besides just producing. I do other activities too; for example, I do the sales myself, I visit the places where the brand is sold, I manage social media, etc. So I don't think big volume production will affect me any time soon.”

Sergio Garnier (Ultramundo): “I believe the market looks out for the market. I feel responsible for taking care of my people, my community, and my environment. What I do believe is that a more conscious consumer will seek out products that have that responsibility toward their community. So, rather than talking about the market, I like to talk more about a conscious consumer who knows what they are drinking, where it comes from, the practices and processes to make it, etc. And when the producer is the brand owner, for me that's the ideal scheme where they capitalize on everything and that margin stays with the same people who produce it.”

Q6: What is your plan to face the growth demands derived from globalization, especially when this demand exceeds traditional production volumes?

Erika Meneses (Aguerrido): “We respect the maturation times of the agaves. We aren't producing for the demands of globalization. We go with the earth's calendar.”

Leo García (Macheé): Macheé has never been about producing volume. With Macheé, I’ve never thought about large-scale production. I’m talking about 6,000 - 8,000 bottles a year, because that would already be a large production for us. Surely we can produce a bit more than we have this past year, using 2025 and the months of 2026 as a reference. My idea has always been that, in due time, I can support other producers so their products can become known through the Macheé brand. At one point, many people supported me (and still do), so why not give that same opportunity and support to other producers? When that time comes, we’ll think about volume, but it would be 10,000 bottles shared among 6 or 7 producers. It would be something really cool to have more producers in this project.

Sergio Garnier (Ultramundo): “My production limit, as I mentioned, will be set by the amount of agave I can harvest regeneratively with my management program without putting pressure on the region. I am privileged because I have access to a large land area in a desert zone, so that allows us that variable. But the amount of agave is what will set my limit. And if more demand comes, we will always be limited to that. We calculate around twenty-five thousand bottles as our limit.”

Q7: What are your favorite trends you've seen recently in the industry? What topics are you most excited to personally teach when sharing your brand?

Erika Meneses (Aguerrido): (I think she understood the question as “least favorite trends” but still a good answer)
“What I've seen is that everyone wants to be part of the mezcal boom. Everyone wants to have their brand and they want to call everything 'artisanal mezcal' or 'traditional mezcal,' when in reality they are what I call 'prostituted mezcals.' The problem is they seek mezcal titles through workshops that only offer theory, but it's a 'hollow theory,' without having an experience based in reality. That's a trend I've seen a lot and it's very unbalanced. So, that would be my point of view.

What I like most is talking about all the traditions and culture surrounding mezcal. About the roots, the heritage; what makes us part of this product. But, more than anything, our mission is to correctly convey what life in the field is like. We want to show what it’s like to be a producer, a small producer, and a farming producer, you know? We have to remember that our mission is to correctly convey what traditional mezcal is, but I also like to talk about the characteristics that make us unique: the taste of each family, the taste of each maestro. It’s always important to not just talk about me, but about all the people and families who make up the project and make it possible for this to progress. No product would make sense without its people. The mission is to raise awareness and make people value that effort each maestro or family makes to preserve a tradition so that the little that remains is not lost.”

Leo García (Macheé): “I’ve seen that many doors are opening directly for producers. Before, there were places (restaurants, bars, cities) I wouldn’t even dream of reaching. Places that were occupied by big-name brands or brands that already had a good market position. So now, small spaces are being given to us, where they are giving us a chance. I think this world is expanding and knowledge is expanding because of that direct link that consumers can have with the producer. It’s a very good thing. And what am I excited to teach? Well, the truth is I always like to talk about our process. Our process is very special because of the type of distillation with 'Refrescadera' that we use. That’s part of what makes our mezcal have very complex flavors and aromas but it’s also thanks to the care we put in throughout our process. For example, planting our little magueys, our own water capture system, the resting time we give the mezcal in glass for at least 6 months (though usually more), using and recycling the bagazo (agave fiber waste) to make the handmade paper for the labels. I like to talk about all of that so people know it’s not just mezcal and that’s it. We focus on other things that, in the end, benefit us and our environment.”

Sergio Garnier (Ultramundo): “I really like the trend of transparency. I like to see the whole process displayed in a bottle or online, see what’s behind that mezcal you're tasting, the people, the techniques, etc. I believe that is the new 'premium' and not just a pretty bottle or good marketing. I think the new 'premium' is an authentic product, made in a traditional way. I love that trend. Something else that catches my attention is that I’m starting to see brands that don't put the name of one maestro mezcalero on their labels, but rather the names of all the people participating in the production. That’s what we do. Not everyone’s names fit, but we put 'Colectivo Pelayo' and on our website, you can find the photo and name of every person who is part of this collective. And above all, more awareness about respect for the environment and surroundings. Those are the trends I’m seeing and I like them a lot. Another topic that interests me is the relationship with local art and culture, which is something we seek to do at Ultramundo. Collaborations with artists, seeking to create new expressions, seeking new flavors, and above all, informing the client or consumer more about what they are drinking and everything that entails.”

Q8: What are the trends regarding the long-term sustainability of the agave supply? How do you balance current production demand with the long-term viability of each agave species? Are there any magueys you are avoiding because they have been overexploited?

Erika Meneses (Aguerrido): “In Aguerrido's case, only mature magueys are selected to make our mezcal. We respect the 'calendar' that the earth itself sets for us to choose mature magueys. A plant is always going to have different variants. For example, depending on whether the area where it grows is cold or hot, or if the maguey is in stony ground, or the minerals surrounding the agave; all of this is an important factor in agave maturation. To balance demand, we only work during the dry seasons, without working all year, which results in very small and unique batches. Our key practice is the pre-selection of mature agaves for production and for the seed bank, avoiding indiscriminate cutting and performing reforestations. We take special care of endangered endemic species, such as the calabacita and zacatoro maguey; we grow these in our nursery. From these rare magueys, we only make extremely small batches, like 20 liters per year, supervised by a single producer to ensure their conservation.”

Leo García (Macheé): “At first, when mezcal started to get more visibility, the concern was that the maguey was going to run out, but fortunately there are projects dedicated to the preservation of magueys. In our case, we have certain varieties of maguey planted and we are taking care of that. What will happen in the near future, though, is that there will be very little wild maguey; most will be cultivated or semi-cultivated. Right now, there are very interesting projects and we are trying to implement those methods. We have our own little magueys so that in the future we can produce with those types of semi-cultivated magueys. For example, magueys that are scarce are Tepextates, Jabalís (in our area), Coyotes… those types of magueys. But most people are already planting them. It may be that in a few years there will be more of those magueys, but there will be a significant change in the growth or development of the plant and in the mezcal production yield due to the type of cultivation. But I am sure that very few varieties will be lost completely.”

Sergio Garnier (Ultramundo): “Regarding agave supply, we are a very particular case because we integrate everything from the land to the final product. We integrate and operate the entire process. It has been very challenging and that is why our brand has had a relatively slow growth rate. And we only work with one type of agave that grows in our land, which is Lamparillo. The other plant that grows on our property is sotol; expressions using this plant will also come. We are reforesting the most eroded areas with lamparillo and we are reversing desertification. We are doing the opposite of what happens in other areas where areas with a lot of biodiversity are being devastated to become agave monocultures. We believe in respecting the environment as it is so that the quality and flavor of our product remains the same.”

Q9: Do seasonal changes affect your resources or mezcal production?

Erika Meneses (Aguerrido): “What we do is work by seasons, only in the dry months. We need it not to rain and for it to be hot, which reduces our production to about three months a year because right now the climate changes are super crazy. The cold lasts until February, so we start at the end of February and finish in early June, before the rains arrive.”

When it rains, we have to stop, as it affects us in several ways:

• Logistics: It is very difficult to access the lands to bring the maguey from the hills.
• Yield: If there isn't much sun, fermentation lengthens. Also, the maguey captures water, which lowers the sugars and reduces the yield.

That’s why we only work in the dry season, because that’s when it’s most profitable.”

Leo García (Macheé): “Yes, it affects us quite a bit. It affects us when it doesn’t rain much, it affects us when it rains a lot, it also affects us, for example, when it gets very cold, some magueys were burned by the cold. All those climate changes that are happening are affecting production. However, we still continue to guide ourselves by the seasons. We only produce in the hot season, but for example, two years ago it didn't rain much, so there was a more continuous and prolonged production season that gave us the opportunity to produce mezcal more constantly. But yes, all that does affect it.”

Sergio Garnier (Ultramundo): “Seasonal changes directly impact our production. They are totally interrelated. Starting with:

• The castration (capado) times that spring sets for us. Our agaves survive (at most) one year after being castrated (capados), and we only produce with castrated agave (agave capón.
• Our fermentation is natural, so each season brings different microorganisms, and that changes the flavors.
• We have very extreme temperatures in Durango. In winter, we reach temperatures even below zero celcius, which slows down the fermentations a lot, producing very different flavors, and in summer we have fast fermentations that give other types of flavors.
• In the rainy seasons (which are few days) but when we have them, we have to stop all production.

We have to make very good use of our time because we only have eight to ten months to use the agaves we castrate each season.”

Q10: How do you like to spend your time during distillation? What keeps you awake during those long hours?

Erika Meneses (Aguerrido): “What I would tell you is that there are always many activities to do. When you are distilling, you don't stay static or sleeping. While the distillate is on low heat, we are in a constant rotation of activities:

• Loading the maguey oven or chopping wood.
• Going for wood, carrying more maguey, or bringing new stone or palm leaves.
• Grinding maguey to fill new vats or adjusting other batches of already distilled mezcal.
• In the case of the women, they are also making food or looking after the animals, the chickens, and the children.

“We lead a normal life, but with very long days. We work until 12:00 at night, rest from 12:00 am on, and return at 6:00 in the morning. The day goes by quickly because there is always something to do, there is always a lot of movement, even visitors come to the factory. When we are already very tired, of course, someone else relieves us so we can rest, because it's too many hours of work.”

Leo García (Macheé): “Well, when distilling, you have to be very careful with controlling the fire. You have to be very, very attentive to how the mezcal is coming out, so the only option we have is to talk amongst ourselves, unless we are preparing another batch at the same time. But most of the time we spend time adjusting the fire and talking with the people who are with me distilling. Sometimes we take turns to rest a bit because they are long and heavy days.”

Sergio Garnier (Ultramundo): “In our case, it’s resting, eating, and working. Our distillery is in the middle of nowhere, so the distillery team lives there. So we look for different activities we can do, always trying to make them at appropriate times and take time for rest and meals. Sometimes we spend time cooking, taking care of and watering the garden, checking the nursery, and that sort of thing.”

Q11: In your area, does the word “mezcal” also refer to cooked agave as a food source? If so, are there preferred preparations for consuming it?

Erika Meneses (Aguerrido): “In our region, the word 'mezcal' is not used to refer to cooked agave, and normally here it is not used to make any dish or to eat it. It's not known that way. I think that's more in Oaxaca.”

Leo García (Macheé): “For us, mezcal is the liquid itself. The rest is cooked maguey, but at our palenque, we don't use it for anything else; we only use it to make mezcal.”

Sergio Garnier (Ultramundo): “Here in our area they call it 'Queote.' It's still common in some areas but it's not very popular. But they don't call it 'mezcal,' they call it queote or they also call cooked maguey 'cajeta.'”

Q12: In your mezcal production, do you prefer to maintain consistency in your practices or do you like variations and changes?

Erika Meneses (Aguerrido): “Yes, normally each year we have a good idea of what batches we’re going to do. Most of our batches are from maguey cupreata Capón, since it's the endemic maguey here in Guerrero and our communities. But we also like to experiment. We’ve stepped outside of what was purely traditional, which was producing only with cupreata. We make changes with this agave, like pechugas and distillates with fruit. We do what I call 'recipe games,' so to speak, like when you're in the kitchen and you add a new ingredient. For example, we've made macerations with chumilín (local insect), with torito, and with nazares. That’s how we get batches different from the common or traditional ones. Furthermore, the market asks us for different pechugas or distillates, and as we practice, we see how the cupreata works combined with other things. We create that variation for new batches without relying solely on the traditional practice of the region.”

Leo García (Macheé): “We try to maintain our practices. But each batch, logically, is very different because it's an artisanal process and there are factors that vary, like the climate and the maguey. So each batch changes and that's why the flavor of each batch varies a little bit. But we don't like to change our practices much. What we do like is to make unique batches. For example, the 'distilled with,' and in our case, something is starting to distinguish us and that is that we do 'fermented with.' We have Cuishe fermented with mango, fermented with pineapple, since we add the fruit at the time of fermentation, and sometimes we throw the fruit in when the maguey is being crushed. So in that part, we do like to experiment, but in terms of the process, we change practically nothing.”

Sergio Garnier (Ultramundo): “The environment itself forced us to adapt to it. As I mentioned before, seasonality affects the fermentation process, but we stick to the traditional method. Currently we have one label and we don't make changes. We consider mezcal to be a living product and we let it express itself in each batch in the way that the earth and environment manifest it to us. Each of our batches comes out at a different alcohol level because we practically don't rectify or adjust it. But our standard process is very fixed. The only place where there is more variation is in the fermentation.”

Q13: Do you, or people you know, drink mezcal with an alcohol content (ABV) in the 20% to 35% range? If (U.S.) regulations didn't require a higher degree, would you make mezcals with lower ABV? I'm curious to know regional preferences.

Erika Meneses (Aguerrido): “The alcohol level we handle in the communities, the traditional ones, are normally 47 or 53 ABV. The mezcals you find in the little stores aren't such a high ABV. Many people get confused and think that high-alcohol-volume mezcals have cane alcohol. Even people from our own region don't know how to drink high-ABV mezcals because they are more familiar with low-ABV ones. While the older maestros do like to drink the 'puntas' (heads), people who aren't familiar with production unfortunately prefer low-ABV mezcals. We were already working with these high levels long before entering the U.S. market, because traditional/original mezcals are not low ABV. Therefore, we don't describe our ABV as high, but as the normal ABV of a traditional mezcal, unlike industrial mezcals whose characteristic is always to have a low alcohol content.”

Leo García (Macheé): “Here in Oaxaca there is a lot of talk about that. There is a lot of talk about low ABVs and many say that it is 'bad mezcal' and that no one drinks it. In our town, we are used to drinking mezcals of 48%, 50%, 55%. So it could be said that we make mezcal in a 'normal' way, but the brands with low ABVs differ because they make the alcoholic adjustment after production. We prefer to take it out at 48-55% ABV because at that level, the aromas are perceived more, the flavors are perceived more, and at the same time it's not as aggressive on the palate.”

Sergio Garnier (Ultramundo): “In my region, mezcal is not consumed at that ABV. I think there are some commercial brands that sell it at 35% ABV. They aren't very popular. The closest case I know of is in San Luis Potosí where they consume what they call 'vino mezcal' (mezcal wine) in levels of 20-30% ABV, even lower than 20% ABV, but I don't remember the exact alcohol level.”

Q14: What do you feel most proud of when sharing your mezcal? What would you say distinguishes your mezcal and your brand from others?

Erika Meneses (Aguerrido): “What distinguishes our brand and our mezcal most is our method of production: we produce tiny, unique batches. We are traditional mezcal from Guerrero and we work with very well-defined production practices. What makes us different is that our mezcals are very well made, with good flavors and good notes, because we take great care of the production process.”

Leo García (Macheé): What makes me proud is our commitment to prioritizing quality and respecting the entire production process; from planting agave, to mature plant selection, to distilling slowly, to resting the mezcal in glass for 6-12 months on average, to recycling the water we use in the refrescadera and the agave fibers in our labels. We focus on making a quality product over trying to produce for higher volume. That can be something that sets us apart besides making mezcal with complex profiles with our refrescadera method and fermenting our agave with fruit in some special batches instead of just adding the fruit to the distillation process like most do.

Sergio Garnier (Ultramundo): “It makes me feel very proud to take up a tradition that had practically disappeared in my region. I’m referring to the production of mezcal with maguey lamparillo. And I feel very privileged because before being a mezcal producer, I consider myself a mezcal fan. And to provide a mezcal for those fans who really like such a peculiar, different, and distinctive profile as lamparillo (which are the flavors of this land), it makes me feel very proud. Furthermore, because of the way we are doing it; it doesn’t impact the environment negatively, and we are seeking a benefit for biodiversity and for the community.”

Q15: What are some local elements of your specific regions in Guerrero, Oaxaca, or Durango that, in your opinion, give your mezcal its unique essence and distinguish it from other products in your area (besides the maguey you use)?

Erika Meneses (Aguerrido): “I think what makes our mezcal very special is the taste and the hand of each maestro or family. This is reflected in how we adjust the mezcal and the ABV we give it. That personal touch is the factor that makes our mezcals different, even though we work with the same agave. It happens that we are from different communities and the customs and traditions of each region are different. We can be from the same municipality, but the way we work is different. Those factors are what, in the end, mark the difference between the distillates that each family produces.”

Leo García (Macheé): “I have always said it: in our case, we are fortunate to be in a region where the 'refrescadera' is used. Besides the graciousness of the land that provides us with a lot of maguey, especially Karwinskii, the refrescadera also helps us a lot because it makes our mezcals distinguish themselves or have that particularity compared to others. The fact of distilling only once and using the famous 'plates' that are inside the refrescadera allows the aromas and flavors to be more present. They are denser mezcals with much more aroma and much more flavor compared to those distilled twice.”

Sergio Garnier (Ultramundo): “Well, besides the maguey (which is quite unique), I think the wooden 'viejo' (still) is a very interesting element, for which we use sabino wood. We also use sabino wood for the fermentation vats, which are tomb-type vats buried; they are small vats. And well, everything that makes up the flavors of our place, like the local biology that changes by season but remains flavors of the desert.”

Q16: What does the title of Master Mezcalero or Mezcalera mean to you? Is it simply the person directing the production process, or does it carry a deeper meaning?

Erika Meneses (Aguerrido): “The word 'maestra' or 'maestro mezcalero' is assigned to the person who is in charge of production and produces the mezcal. When we started the project, we weren't used to using that word. Among ourselves, we call each other by our names. In fact, to this day, here in the region we use the word 'don' or 'doña' (like 'Doña Erika,' 'Don Refugio,' 'Don Vicencio') more than 'maestro' or 'maestra.' That word was assigned more by clients and external people, especially in the Mexico City market. Although it is something that distinguishes those of us who produce mezcal here, there are other regions that name the producer differently.”

Leo García (Macheé): “'Maestro mezcalero' is a new word, a word that hasn't been used for very long locally. The truth is I don't like to be called that because I don’t think I am a ‘Master’ yet. I always try to learn more. I like to be called 'Leo' better. Previously it was known as 'the producer' or in the Oaxacan towns it's called more like 'the one who puts out mezcal.'”

Sergio Garnier (Ultramundo): “I have a lot of respect for maestros mezcaleros. I don't consider myself one. I consider myself an apprentice, a mezcal producer. As I understand it, 'Maestro' has the meaning of 'teacher,' someone who teaches others. And it's someone who has received knowledge from generations past and then decided to share it with others. For me, that's what it means to be a maestro who is directing a team. Well, I've also met maestros who practically do their whole process themselves. But if you see our labels, the name of a maestro mezcalero isn't there, the name of our collective is, because in the case of our project, there isn't a master per se. The masters are those who taught me and I try to share what I've learned with my team. But those are the true masters, those who taught me to make mezcal and from whom I continue to learn every day.”

Q17: What is your opinion on the trend of some big tequila brands releasing expressions aligned with artisanal or traditional production methods (like the 'Dobel Tahona' releases)? Do you consider this a threat to the mezcal industry or a positive change for agave spirits?

Erika Meneses (Aguerrido): “In fact, we don't even recognize the tequila brand mentioned in this question. We don't consider it a threat to us because obviously we have different markets. We don't enter where industrial drinks enter. Our market is traditional mezcal and it's a smaller market but it's a more selective one. Our market is for people who already have an advanced palate and that makes it an easier sale for us. We don't really consider it a threat nor do we recognize the brand. As they say around here, 'we don't cross paths,' we don't know anything about them.”

Leo García (Macheé): I don’t think it’s a direct threat; there will always be a major difference between tequila and mezcal. Tequila, right from the start, always is and always will be volume production, while mezcal, in my case, I can say is characterized by being small-batch, and logically, the care given to each process is very different. Another difference is the type of maguey. In Oaxaca, we are fortunate because we have the largest number of maguey varieties, so that is what characterizes the state, regardless of which state started distilling first. What they are doing now with tequila (their artisanal versions) is more of a marketing gimmick, an attempt to get people to notice them. But I think, as is the case in many situations, it's just talk. We would need to look at the terms "artisanal" and "traditional" from a more scientific perspective to see who truly qualifies to put that word on their label.

Sergio Garnier (Ultramundo): “On the one hand it seems like something positive. It means that people are looking for what we are doing. It's simply opportunism to give people something different, to give them something that has more authentic notes when it really isn't, but seeing it from that point of view I think it's good because it continues to promote the artisanal techniques and processes we use. That eventually will bring consumers closer to the authentic one, because the big brand has much more reach than what we can have as independent producers. So in the long run, it's something good because people aren't dumb and will know how to distinguish.”

Q18: Is your production approach more technical and precise, or more intuitive and rooted in tradition? In what way?

Erika Meneses (Aguerrido): “Our production is more traditional. What we do is preserve the tradition as much as possible so as not to lose it. We don't try to get into technical methods that other people offer or from people who learn to make mezcal through courses. We don't enter that field, nor with the Comercam certifiers. We make our mezcal in a traditional way and wouldn't want to do it any other way.”

Leo García (Macheé): “In my case, I rely on tradition. I prefer to follow what I was taught, guiding myself by intuition and practical experience; to me, that represents the true essence of an authentic mezcal. Although there are now devices that offer technical precision in certain parts of the production, I believe it’s better to use your senses and knowledge to make decisions; from identifying when a maguey is mature to determining the alcohol content of your mezcal with the venencia.”

Sergio Garnier (Ultramundo): “My approach definitely leans more toward the technical side. I don't have that gift, I don't have that lineage, that tradition. I have been learning this trade for 6 years now and I've had to go with the technical approach, trying to measure what I can, trying to investigate. Besides, in my region, this tradition of working with Lamparillo is not as common with other producers. The lamparillo is a very difficult animal to tame, so my approach goes that way.”

Q19: What is the most delicate step in your process, the one where things can go wrong most easily? How do you handle a batch that doesn't meet your quality standards?

Erika Meneses (Aguerrido): “Personally, fermentation is the most delicate step of our production because that's where all the magic that generates the alcohol happens. But if you don't know how to prepare the vat, or don't know how to put the right amount of water, or don't know how to taste the 'caldillo,' the vat can be ruined and it won't give you anything; it won't generate mezcal. Another example is that if fresh water isn't used, the yeasts won't start working. There are many factors that influence it. Other examples can be that you shouldn't wear perfume on your clothes, you shouldn't wear nail polish, you shouldn't eat/squeeze lemon/limes near the vats because, even though it could be a local belief, it's something very real we've seen: if lemon/lime juice falls into the vats, it stops the fermentation. 
When there is a batch that doesn't come out with the quality we are used to handling within the brand, normally those batches are left for sale in the community or for local festivals, birthdays, etc. What we do is store it in glass carboys so it settles and we let its flavors align. Sometimes they just require more rest and more time. We leave them there for a while in a cool place so they can be put on sale later. But normally we use them to sell by the liter to local communities or by the copita since they didn't meet the standard handled within the project.”

Leo García (Macheé): “Every phase of the production requires a high level of attention, from the initial maguey selection to the final distillation. During the cooking stage, for instance, you must master the exact amount of wood needed to ensure the maguey is cooked the right amount, not charred, yet never left raw. In fermentation, it’s about knowing the precise moment to introduce water and recognizing exactly when the vat is ready for the still. Finally, in distillation, one must remain incredibly attentive to the fire and, in our specific case, monitor the water levels in the refrescadera to keep everything cooling correctly. If a particular batch doesn’t fully convince me, I simply let it rest for a while in storage to see how its profile evolves over time. We actually just opened some containers of a batch we made a long time ago that I hadn’t liked and I was really surprised on how well it has matured while resting in glass.”

Sergio Garnier (Ultramundo): “Definitely fermentation has always been our critical point, especially because we are in a region where the climate varies drastically and suddenly. I believe fermentation is where the magic happens and it's where we have the least control. In that step, we have to let the earth do its thing. Normally, batches that don't meet our quality standards aren't released or we re-process them.”
