Edible after years of trying

Been struggling with dough for years and temperature swings of my house. I used an electric proofer today and hid it in the corner of my kitchen. 94° for about 2.5 hours. Then I worked the dough and used a rolling pin in fear of tearing the dough and wasting all that time. Hexclad pan for the oven bake. 450° 18 mins.
