how should i explain not being able to take a 4th year of foreign language?

for backround, my foreign language teacher has some odd feud with my family that’s been going on since my sister 9 years ago. She’s been the worst to me out of all of my siblings, which culminated in her accusing me of breaking ~$30,000 worth of school property. It was, of course, a lie and nothing was actually broken in the first place. Along with that she’s accused me of cheating on multiple occasions, and once accused me of using AI on an assignment where I made multiple grammatical errors. Because of all of these reasons, my parents say they don’t feel comfortable letting me take her class again next year. How do I explain, in a polite way, that my teacher is a crazy bitch and thats why i haven’t taken a fourth foreign language class?

White male, southern US, moderately low income. My GPA will be around a 3.1-3.3 when I apply (I’ll finish this year with a 4.0). I had a 2.1 my freshman year and something like 3.2 my sophomore year. I had a lot of extenuating circumstances; I have KLS, an extremely rare sleep disorder which meant I slept around 15-16 hours a day in month-long episodes throughout the year (wasn't diagnosed til junior year, partially bc my parents couldn't afford the medical expenses of diagnosis) and I was kicked out of my house and fully homeless and without internet twice (for a month my freshman year and around 2 weeks my junior year). I haven’t gotten my ACT score back yet but the last practice test I took I got a 34 composite. The person who reviewed my CONA application said it was one of the best admissions essays they'd ever read. I have basically no teacher in mind for a letter of rec. Want to major in linguistics or polisci btw.

I think my course rigors pretty good, I was in a pre professional magnet school 9-10th grade for law (hated it) which severely limited the classes I was able to take and the rigor of them. all honors since freshman year and I’ve taken ~80% of the APs offered at my high school:

-AP psych freshman year

-AP chem and APWH sophomore

-AP stats, AP lit, apush, ap euro, apes junior year

I’m gonna be taking like 3 aps my senior year as well as organic chem

As far as extracurriculars

-I was one of ~20 students in my state to be accepted to the Conference on National Affairs (only student in my region)

-I'm the president of security council for my states model un, of which ~1,000 students will attend. I've been given the authority to moderate and run debate for a security council comprising of ~100 students. I’ve also been a campaign manager for 3 candidates across my states model state gov and model UN, 2/3 were successful.

-I’ve won 3 awards for bill presentation across model un and model state gov, and I’ve successfully passed 4 bills since my freshman year

-I was a founding member and leader in the first high school Young Democratic Socialists of America chapter in my state

-I’ll (hopefully) be assisting in linguistics research in collaboration with a local college, facilitated through a program in my high school

-Tech sound/lights director for my schools plays, I manage about 6-8 people and its one of 3 backstage leadership positions

-Organist for my local church, I’ve played in a rock band for 3 years, and I’ve played cello for 2 years

-Worked with a teacher to introduce a recycling program to my high school

-Worked with my Dad at our public library basically all the time

-Organized 2 service projects for my high schools student Y organization

-Helped my dad a lot with finances and taxes, I don’t know a fancier term for this

-Writer and director of a short film that aired at a local theater

TLDR everything on my app is up to speed except for my gpa because I was undiagnosed with an extremely rare and debilitating disease freshman and sophomore year. What I'm asking is has it been done before? Has anyone else gone to a top school under circumstances similar to me? what did they do with their application to sooth the fears AOs have about low gpa students? What should I do next? pls pls pls answer
