How do you improve Fiber intake with a picky kid?

My kid is not active at all lately and at first I just thought he was lazy but now I can see it starting to affect him. He eats “okay” so I assumed he wasn’t missing much nutritionally but it turns out he’s barely getting enough fiber and probably not keeping a stable blood sugar either. Now trying to suddenly introduce a whole list of new foods feels impossible because he refuses almost everything 😭 How did you guys approach adding more fiber into your kid’s’ routines without every meal turning into a battle?
