Is it possible with cross contamination to have symptoms show up 48 hours after the event?
Hi all. I'm a long time lurker, a first time poster.
My wife And I are suspected celiac.
Two days ago, we went to a neighbor and Food from his barbecue. He assured us that everything was OK and that there was no potential risk for cross contamination as there was no wheat products going to be consumed. He thoroughly cleaned everything. All the dishes, and the barbecue. He took our cross contamination risk very seriously. The only potential risk was that people next to me were eating corn chips that said on the label may contain wheat.
The food arrives and consists of steak, potatoes, onions, mushrooms. Some of the mushrooms were cooked in wine. I’m not sure what kind of wine, but they were drinking it from a bottle and also using it to cook. Within 15 minutes of me starting to eat,, I started to have stomach upset. It was such that I had to pause in eating as I felt slightly bloated and just a bit off. I raced home and immediately had diarrhea into my toilet. I also felt queasy and had some abundance of stomach acid.
Yesterday I felt quite sick and it took me until the middle to end part of the day to regulate and feel normal. And now today, I have minor itching in my bum. The itching in my bum is quite normal for me after I’ve had any exposure to gluten.
My wife who ate the same food as me had no symptoms whatsoever until 20 minutes ago when we were eating food. She got violently ill and felt heated and fluffy and had to run to the bathroom also.
So my question is this. Have any of you ever been glutened but not experienced symptoms for two days? Then they come on with no warning? I am very worried about my wife, as she has been in various illnesses and injuries since October and she's finally doing better. Until today. Any thoughts would be appreciated. Thanks.
