

What's the best way to prepare figs for the winter?

So I bought 3 different fig varieties and the man who sold them was very experienced and wise in his craft, so most of what he said flew over our head.
All I can remember was:
in our region it would be wise to leave them 2-3 years in a pot and over winter we should store them in a kind of safe space like a garage/ carport
repot them every year into a bigger pot.
put some small stones on the surfaces of the pot so they don't dry out too fast.
That's all I remember,
But apparently he told us something else, that we should keep them in a pot inside a pot.... But that doesn't really make sense to me?
And also how much bigger should the pot be every year when we change? He didn't really talk about size of the pot but rather something like the stem should be this and that higher above the soil.
Any fig experts here? Our last one died miserable and I really want a big fancy fig bush in our garden...
