Any recent games that have a satisfying, long-form sense of progression?

One thing that strikes me with a lot of modern games is how unsatisfying the progression sometimes feels. Often you are showered in gear, epics, cars or can essentially skip parts of it because players might get bored if they aren't given constant dopamine hits in some form or another.

Even worse is if I have to artificially throttle myself or "Just don't use all the stuff you're given", that just makes the experience feel completely silly and antithetical to the power progression fantasy.

So I was just wondering, any suggestion and recommendations for games in recent years that also does progression well, in a slower, satisfying manner. Either where you build out your character slowly, each gear piece matters. A driving game where you don't wade around in cars after 30 minutes or how you build yourself up in the world takes time?

Just something that does long-form progression well.
