
Ate enoki mushrooms that I may have not properly stored
about a week ago I cooked with enoki mushrooms for the first time. i anticipated using all the mushrooms so i cut off the roots, but had quite a few leftover so i dried them with paper towel and stored them in a plastic bag in the fridge. i cooked with them again today, they smelled earthy and weren't slimy, but i can't recall if the stems had any discoloration or not. do these look okay/what kind of risk do i run with these not being properly stored? i only read about proper storage after cooking these mushrooms today and want to make sure it's alright that they were stored after the roots were cut
