[HELP] Rigging in Blender using Rigify breaks my model (Read more for context)

So I've recently made this low poly character myself, from ground up, nothing really crazy about him poly count, nor structually wise, so just made a ammateur for it, and parented the model to it, using automatic weights.

But for some reason...

His legs often completely broke, I at first though I could fix it by simply tweaking some values on the weights, which sortha fixed it? Yet some bones still for some reason had NO body parts attached to them.

And I did used the simplified Humanoid base rig they provide, not the complex one, but it didn't matter, because the next issues just made me want to scream against the wall.

His left hand worked fine, even had some rotations (Albeit was distorting my model quite a bit) but his left hand?... For some ungodly reason. No matter what changes I did, it simply would NEVER ever rotate. Even if I changed the weights or changed the scale or position of the bones and regenerated the rig.

But here comes the real offender to me. Mixamo... Which often tends to make mistakes on rigs... Somehow MADE a acceptable one, as in, it worked well enough.

I am not using this model yet for anything. But I also heard editing Mixamo rigs is a bit trickier than regular rigs, so I am kinda hesitant, but this really made me confused on what the heck is going on.

Edit: One more thing I forgot to mention, but I did used the X-Mirror option from Blender, so there wasn't any assymetry in the bones positions or scales in the left/right legs/arms.
