Watching Wrestling

I want to watch wrestling but I am unsure what is the best way to take in the information and get better from it. I never really watched wrestling with the intention to actually take something away besides entertainment but I want to actually get something from it now. Also I'm looking to wrestle more systematically and less off my head if that makes sense. To elaborate more, I'm picturing like a flowchart for every position and have things based on every reaction my opponent gives. Is this something that is used at higher levels? I know at a point it becomes like an automatic flowchart for your body but I have a good amount of free time and want to kinda optimize every position mentally as I'm still in off-season. So kinda 2 questions here, how to gain more from watching wrestling and does it make sense to adopt a sort of systematic approach to each situation?

Neutral Defense

So basically I was pretty good(not intended to brag just wanna point out it worked for me at that lower level) in highschool and tended to be stronger and better than opponents so I usually defended with whizzers and hips and tended to like people get in on shots because I was comfortable there. Is this a sustainable way of defense in college. If so any recommendations on who I could watch who wrestles like this at a high level?
