SummerCart menu in black and white, but PAL and NTSC games are in color

Hi everyone,
I bought an EverGenesis SummerCart from AliExpress at a good price a few weeks ago. Everything works perfectly: I've tested PAL games, NTSC games, and even ROM hacks without any issues.
However, I noticed from the very beginning that the ROM selection menu was displayed in black and white. Since the original menu is very minimalistic, it didn't really bother me. I even thought it was intentional.

Everything works, except that the menus and box art are also displayed in black and white.
I also noticed that when I launch a game and then press the Reset button, the menu briefly reappears in full color before switching back to black and white in less than a second.
To summarize:
My Nintendo 64 is a French PAL model (unmodified) using the original AV cables.
I'm using a CRT TV (I'm basically playing under the same conditions as back in the day, with the same hardware I had almost 30 years ago 😉).
Both PAL and NTSC games display in full color.
Firmware version: 2.20.2.
I replaced the original microSD card with a high-quality SanDisk card.
I tested on another CRT TV and the problem is exactly the same.
P.S. I'm aware of the color issues that can occur when running NTSC ROMs on a PAL N64, but my setup doesn't seem to be affected. I've played around ten different NTSC games for several hours each and haven't experienced any color problems at all.
Does anyone have any idea what's causing this or how I can get the menus to display in color again?
