Puppy Biting

I have a basset hound that’s almost a year. Got him from a family member that didn’t put any stock into training or anything when he was small. He is still puppy biting and jumps on everyone. He’s a great learner and is super excitable still but I have a 3yo and I need to get these two things under control. Any advice? I’ve tried a bunch of things I’ve read online but nothing is working

Steam Table

I’m the new chef for my kitchen, I took it over about 10 months ago after the old one was fired. One of the other chefs from another location in the company that has been with us for years and has a ton of experience visited my kitchen this week. He had a ton of kind words for me and it was overall a very positive visit. One thing he did give me advice on was our steam table. We have marinara, queso, and chili stored there in metal 1/3 pans. I have metal slotted lids on them and he said to not have lids as it can brown the queso and thicken all 3. I have several issues with this but I’m unsure if this is a common thing people do and I’m just getting in my head about it or if I’m right and it’s improper and also just gross
