Help me figure out where to go from here

We currently bring in about 500k (300k/200k respectively) a year before tax, including super.
We bought our $2.6m forever home in Sydney last year and have $1.75m mortgage, with $200k in the offset. P&I repayments are about $10.5k a month.
Have about $100k invested in Vanguard ETFs.
Next step is to look at debt recycling to buy shares + ETFs. Would like to keep $200k in the offset as an emergency buffer but invest all future earnings via debt recycling.
Does this make sense (or should we keep it all in the offset) and is there anything else we should be looking to do to get ahead and be able to retire earlier?
Monthly expenses for the two of us are about $4k a month (excluding mortgage) on average when you factor in holidays etc on top of groceries and utilities. Won’t be having children.
