How could I build up that 'sense'?

my first language isnt english, so i dont know if sense is a fitting word.

I understand that just talking to others is crucial in developing better communication skills, but what should I be looking out for, how should I reflect on my past convos?

and what should I do when I just stop caring in the middle of a conversation? the other day when my friend was talking about his interests, I suddenly stopped being interested. Everything I said felt like work. Nothing felt free flowing. I was scrambling for anything to talk about.
