Getting there with GF Sourdough

3rd loaf made using fairly new starter and King Arthur's GF Bread flour sourdough recipe.

1st 2 times I followed the process detailed in the recipe. Both were good but left room for improvement. One I baked same day that had a lovely crumb but lacked sourness and the other I held in the fridge for about 16 hours, which had good sourness but a pretty tight, firm crumb.

For this loaf, after reading some posts here and exchanging comments with another baker, I decided to deviate from the written recipe and handle the dough as little as possible in hopes of achieving a lighter, more open crumb.

After the initial mixing and resting for 20 minutes, I folded and shaped the dough, placed in a cloth lined banneton and let it proof at room temp for three hours. Even though it was a hot day, the dough only rose about 50%--it definitely didn't double. I then put it in the fridge for 27 hours. It did continue to rise in the fridge, coming close to doubling overall.

I removed the loaf to the counter while preheating (it was about an hour) and baked in a Challenger cast iron bread pan. I let it cool in the turned off oven with door ajar and didn't cut it until the next day (about 20 hours).

This is the result--delightfully sour, more open crumb that is moist and somewhat squishable but not at all gummy. I'm pretty happy with it, though I wish it had had more oven spring and loft. Next time, I think I might put it in a smaller banneton so it doesn't have as much room to spread sideways.

I really think handling the dough hardly at all is key here, and I will follow that process from now on.

Two year anniversary!

I started Mounjaro (in the UK) on my June 1, 2024 at 170 lbs (5' 3.5") and 70 yrs 6mos old. I reached my goal weight of 135 on November 1 that year and started maintenance at 10 mg. Over the next two months, I lost another 10 lbs, so dropped down to 7.5 weekly and have remained at that dose and that weight ever since.

I have been overweight most of my adult life. The final two sets of photos show me at my highest weight (probably around 190ish--I never set foot on a scale...) in 2013/2014 and me now in 2026.

Trizepatide has been life changing for me health-wise. I have several auto-immune conditions that prevented me from losing weight even though I restricted calories/ rigidly practised intermittent fasting for decades. I can now eat like 'a normal person' without fasting/restricting or gaining weight. It's incredibly freeing.

Although I wish it had been available to me at a much younger age, I'm endlessly grateful for it now. I have been doing Pilates with weights 3-5x a week throughout and regularly cycle approx 50 miles a week. (The photos of me in cycling gear are from 2020, 2022 and 2025). Despite all this, I have the inevitable loose and sagging skin on arms and legs that I don't love, but I feel strong and fit, and at my age just have to accept it.

I never had any debilitating side effects, but have had to carefully manage constipation. I've travelled extensively while on Mounjaro without any issues.

This sub has been incredibly helpful to me these past 2 years and I'd be happy to share whatever knowledge I've gained after being on this drug for two straight years.
