


Loaf critiques please
Hey all this is a white loaf I made and I’d love some feedback I’m still not 100% happy with the crumb so I’d love your thoughts
Recipe is
100g starter
375g water
10g salt
500g flour
Process:
Mix starter and water, add salt and flour. Mix with stand mixer till dough is smooth. Rest 1 hr. 4 sets of coil folds 30 mins apart. Bf per temp chart (8 hrs). Preshape rest 30 mins. Shape in banneton rest 10 mins. Stitch dough. Cover in fridge for 12 hrs. Bake in cast iron sourdough cooker 30 mins lid on 15-20 lid off. Cut when cold less
