Make at home chicken breast bites?
Occasionally, I buy lightly breaded frozen chicken breast bites from the grocery store. I'm trying to eat high protein per doctor instructions and these are good for days when I am not in the mood to cook or don't have time to cook. Most of the time, I'm cooking proteins like chicken breast, chickpeas, lentils, tofu, etc., so this comes out of the freezer maybe once every two months. But then I'll eat it twice in two days. The last time I bought them, a 36 oz bag was on sale for $8.99 (usually it's anywhere from $11.99 to $14.99).
I was wondering if something similar could be made at home. I'm thinking this would be the process:
- Cut up chicken breast into medium size "bites".
- Coat with egg then panko bread crumbs and any spices (?). Gently shake dry.
- Lay flat in a freezer bag, close it, and stick it in the freezer.
- When I want to cook it, take the freezer bag out. Remove as many as I want and put on a foil lined tray.
- Bake in preheated oven at 375 F for ~20 min.
- Remove from tray and eat.
Is this correct? Would it work? Would it get as crispy as the brand ones?
**note: I removed the brand name, not sure ifit would be a problem so just thought I'd do it preemptively.
