Sheen for Roigh, Low Open Kitchen Ceiling?

Currently spraying Kilz tinted to approximate BM Simply White on the kitchen ceiling.

House was built in 1910s. I gave the joists a very light sand but wanted to keep the saw blade marks and other imperfections to keep the antique look of them. What Benjamin Moore paint type and sheen should I go with for top coat?

Bottom of joists are only at 7’, so they’re low and going to get dirty for sure. Combined with the rough texture, I dread keeping it clean, but really want the open ceiling for a sense of being not so closed in.

Don’t get me started on the cut joists issue. That’s a problem for another day. 🤦
