Food in Nepal - Recs needed

It’s just another 3 months before I’ll be in Kathmandu! I’m a bit of a foodie and I really hope to eat some good authentic food. I live in Toronto, a very multicultural city, with plenty of momo restaurant. I’m looking for things that I can’t find or difficult to find to eat here. Any recommendations, for food or restaurants? I know Kathmandu is full of Newari cuisines based on a few YouTube videos I browses.

I walked from midtown to Markham - 30km

If you wonder why I did this to myself, it’s because I’m training for an autumn trek to the Everest base camp in Nepal. Just a couple weeks ago, I walked from midtown Toronto (Eg and Bayview) to Markham (Hwy 7 and Warden), weaving through all the greenbelts I could find. Here’s the YouTube video below. Enjoy!
