Tajima (SD) vegan ramen recipe or broth type?
Hi all,
If anyone knows the Tajima chain in San Diego, they used to have an incredible creamy vegan ramen recipe that I would go broke and die for as a poor college kid when I lived nearby. I noticed they changed the recipe a couple of years ago when I went to visit (I ate there regularly circa 2017-2021)... Fried tofu was was too salty and drenched in soy, the broth tasted different, they mixed up the toppings offered. It was a disaster. I don't live anywhere nearby anymore, just wondering if anyone knows what kind of base or style it used so I can either recreate it or order a good commercial broth to substitute for it at home?
Long shot, I know, but thanks in advance if you have any intel!
