BF - mixed 1:30 , 4 round stretch and folds , shaped 12:30am second shaping 12:55am , then I put in fridge from 1am- 8:30am (my dough was 19°c - 20°c )
Cooking time - because I don’t have Dutch oven so I do open oven cooking with pan of hot water next to it , so I did 240°c for like 25 minutes with water pan and then 25-30 minutes 220°c and I let it rest for like 1 1/2 hour cause I needed it.
Also half of my loaf is always holier than the other ???????
