Saving money, while upping bacon game

Fancied a little project, and felt supermarket bacon was increasingly leaking a load of water, and curling up. One option was the 'exceptional range' streaky bacon, at £12.50/kg. Realised I can buy a slab of pork belly for £4.99/kg, so why not

Really, really good, and yet, far cheaper than store bought with little effort.

Cured under vacuum for 7 days. Washed, cut, dried in fridge for a day, fried up with this mornings breakfast. Another batch to cold smoke tomorrow, but really enjoying it without smoke.

Incredibly easy, can cut to your preferred thickness and tastes incredible. Most importantly. doesn't curl up while releasing a tonne of liquid. On a scale of 'not worth it' to 'never buy store bought again' I'd probably put it near the top. Only downside is that it is obviously far fattier than back bacon, so bit of a treat.
